Deb’s Stuffed Peppers

Mixture is very similar to the cabbage rolls.

1 lb ground turkey (or beef)
2 hot Italian sausages (remove meat from casing)
1 700 ml tin of pasta sauce
2 cloves of garlic
1 small onion, diced
2 tbsp oil
2 c. grated cheddar cheese
bell peppers (various colours)

I like to use red, yellow, orange and green peppers for this dish.
Makes for a very pretty presentation.
Sauté onions and garlic in oil and add meats.
Cook til brown. Add pasta sauce and simmer 20 minutes.
Mix in about 1 1/2 c. of the cheddar cheese and set aside.

Cut the peppers lengthwise…into ‘boats’.
Clean out seeds and place in a pot of boiling water.
Boil for about 4 minutes til slightly cooked but still firm.
Remove from water, drain and fill with meat mixture.

Place in a baking dish and sprinkle tops with remaining cheese.

Cover with tinfoil and bake in a 350° oven for 20 – 25 minutes.

When shopping for the peppers, look for long ones instead of short fat ones if you want to make the boats.
Boats go farther...rotfl...I didn't mean it that way!!
With boats ya get 2 peices out of each pepper!
