Like the turkey dressing I would love to take credit for this but except for the orzo and a few other personal touches this recipe has been made as is for generations!

Clean the carcass and set the meat and large bones aside.

To a large pot of water add a package of ‘soup mix’, that’s simply the bags of dehydrated beans, barley and veggies etc...not the ones with seasonings!!
I always remove the kidney beans...YUCK!!!!!
Let this boil for a couple of hours or soak overnight!
this next step is mine...
I hate the way the water looks after cooking the 'soup mix' so I always pour it through a strainer and clean out the pot and start again!
I add the strained soup mix and the meat and bones to a large pot of water and simmer it at a very slow boil for a couple of hours.
Add your veggies,
I use potatoes, turnip, carrots, onions, and dried herbs (another of my own touches).
For herbs I use poultry seasoning(or sage), bay leaves, black pepper and parsley.
Let it simmer for a couple of hours on low heat.

When it’s almost done I sometimes add some orzo… it’s a tiny pasta that looks like rice…really thickens the soup!

Finish it off with a small tin of tomato paste.

It makes for a really hearty soup!!
