Nana's Banana Loaf

This is an old family favourite…my ‘Nana’s’ recipe.

1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed banana (2 med bananas)
1 1/2 c. flour
3/4 tsp baking soda
1/2 tsp salt

Cream shortening and sugar.
Add eggs one at a time.
Stir in bananas.

Combine dry ingredients and add wet to dry.
Mix until well blended.

Place in a greased loaf pan or muffin tins.

Bake in a 350° oven for 30 – 35 minutes.

I like to double the recipe and make little muffins.
They freeze great and you always have 'fresh' muffins!
Just pop them in the microwave and voila!!
