As much as I hate to admit it this is a very healthy dish...I know, how dare I add a heart healthy dish such as this to my collection!?!?
It gets it's name from the 1+ tsp of Black Pepper, it gives the dish a real bite!
The amounts...well it's up to you, I get out my big pot and make enough for an army!

2 lbs of stewing beef
1 large onion
Several cloves of garlic
2 c. carrots
Potatoes (at least 3 c.)
Large green pepper
Large red pepper
Head of broccoli
Mushrooms (1/2 c?)
1 can string beans
Snow peas
(You don't have to add the snow peas or string beans...it's basically any veggie you have in the house, I’ve been known to add canned or frozen veggies in the last few minutes of cooking)
Pinch of salt
1 tsp black pepper (more or less to your own taste, I like more myself)
1 tbsp dried basil
1 tbsp dried oregano
1 tbsp dried parsley
(more or less herbs to your own taste, again I like more!)
tin of tomato paste

In a couple of tablespoons of oil sauté the meat onion and garlic til meat is brown.
Add 2 c. of water and simmer for about 90 minutes.
Cut the veggies into large pieces,
the peppers into long slices.
Add the carrots and potatoes and simmer for 30 minutes
Add the rest of the veggies, herbs and tomato paste and simmer for 20 minutes.

I’d have to say this is indeed the family favourite!!!!!
