Ya really can't make Pineapple Squares without a graham cracker crust so...
(Graham crackers aren't available in Aus so try using gingernut cookies instead, I'm afraid I don't have the recipe for that one!)

Lorraine’s Graham Cracker Crust

1 1/3 c. finely crushed graham wafers
1/4 c. sugar
1/3 c. melted butter

Combine ingredients thoroughly and press evenly over bottom and sides of a 9” pie pan.

Bake in a 375° oven for 8 minutes.

Let cool before filling.


Back to the pineapple squares!

I've been thinking about this recipe and I'm going to double it as one serving is never enough!!!
So double the above recipe and make it in a 9x13 pan!!

3 1/2 c. icing sugar
1 c. butter
4 egg yokes
lg can crushed pineapple
whipped topping of your choice

Cream ingredients and spread over graham wafer crust.
Drain the liquid (and I mean REALLY drain it) from canned crushed pineapple and spread pineapple over mixture.
Top with whipped topping, sprinkle lightly with graham wafer crumbs and serve!

A really nice option for this one is to substitute different fruits in season. Like strawberries or blueberries!!!
