Deb's Chunky Tomato
Pasta Sauce

This all began with a visit to an Italian restaurant!
I orderded what sounded like a lovely light dish and it was but with one mouthful I realized I'd paid $12 for what amounted to a couple of tomatoes and some herbs!!
I opted to try it myself at home and for about 1/4 the price made enough for the whole family!!

Put the water on to boil for your pasta, by the time your pasta is cooked this sauce will be ready!!

A few tbsp of oil
1 finely diced med onion (green onions even better!)
Several cloves of garlic
2 tbsp dried basil
1 tbsp dried oregano
2 - 3 c. diced tomatoes (I prefer Roma tomatoes)

Sauté onion and garlic in oil, add herbs and tomatoes and simmer for a few minutes… or until that pasta is ready to serve!

Spoon sauce over pasta and sprinkle with Parmesan or Romano cheese and serve.

This sauce is brilliant for bruchetta!
Butter your rolls or bread with garlic butter.
Toast it in the oven or under the grill.
Add sauce, sprinkle on some grated mozarella and grill until cheese is melted!

I quadruple this recipe and break it up into small amounts to have on hand for bruchetta!
