Now for my dressing...

People who don’t like dressing like this one!!
I would like to take credit for it but it’s a family recipe, been used for generations.

There are no set measurements but it is really quite simple and basic. How much you make really depends on how big your turkey is. I’ve never even tried to figure this out before so bear with me.

I’d say about 1 medium size potato for every 2 pounds of turkey, so a 16 lb turkey would take about 8 potatoes.
Then start with 1 loaf of bread, you may need more depending again on the size of the bird.
You should use stale bread but it’s a simple matter of leaving it out for a bit and it will lose some of the 'doughiness'.
Something I do is ‘save’ bread in the freezer... those little bits that just aren’t fresh enough.
I put them in a bag in the freezer so they’re ready and waiting.
It adds a nice flavour if you have various sorts of bread ‘saved’ up!

Ok, back to it...
Boil the potatoes, I mash them with butter as if I were serving them.
Tear up the bread into small bits and add it to the potatoes.
You’ll need to finely dice a large onion and add it as well.
Keep adding the bread until everything is sticking together but not sticky.
Sprinkle lightly with salt and pepper and now it’s time for the poultry seasoning... this is the only scary part! LOL!!!

I coat the dressing liberally with the seasoning…mix it in well... gotta have strong hands for this!!
Then do it again...and yet again!
You’ll think you’ve added too much...that’s when you have enough...I do it every time!!!
I panic...’well I’ve bloody ruined it now!!’
I taste it and it’s great!!

Stuff it in the bird and bake!!!
You can never make too much.

If you do have too much to stuff inside you can wrap the extra in some cheesecloth and place it in the roasting pan.
It comes out tasting like it was in the bird!!
