I had a bunch of peppers in the fridge and didn't know what to do with them, this is what I came up with.

4 Hot Italian sausages
(remove the casings, if you can buy the meat by the pound even better)
2 large bell peppers
Now I like to mix it up...red, green, yellow, orange... it’s really up to availability and cost, sometimes the price of the other colours is outrageous!
2 tbsp oil
1 small onion
several cloves of garlic
1 tsp dried oregano
1 tsp dried basil
700 ml tin of pasta sauce

Sauté the onion, garlic and meat in a saucepan til meat is brown.
Cut the peppers into large pieces and add to meat mixture.
Cook til peppers are still slightly firm.
Add herbs and sauce and simmer.

Serve over your favourite pasta noodles.

If you cook this the day before and put it in the fridge overnight it is even better!!
