Deb's Ceasar Salad

Ok, here's my recipe for Ceasar salad...lol!
If nothing else it was interesting to write as it's always been a pinch of this and a few drops of that type thing.

1 egg yolk
3? cloves of garlic
1/4 teaspoon of dry mustard
1 teaspoon of red wine vinegar

Mix well with fork
Add 4 tablespoons of olive oil
Mix well

K, as for the garlic, that is a guess as I use the bottled minced stuff, if you do add too much garlic (if there is such a thing) you can always just double the rest of the ingredients.
Trust me I've done this many times myself!
It's good if you can make it a few hours a head of time and let it 'brew' in the fridge. If you're going to use it on a regular basis as I do, you can double or triple the recipe as it keeps pretty good in the fridge for a few days. Just store it in an old baby food jar or something.
Remember, a little goes a long way with this stuff!

Wash and dry your Romaine lettuce and tear into big bite size peices.
Place in a bowl and add dressing...a little goes a long way so just add it a bit at a time.
You can add cooked bacon, even some diced up boiled egg is nice.
Croutons are a must and of course a liberal sprinkling of parmesan cheese.
If you want to make it the entré instead of the salad course throw in some chicken!
I cut up a raw chicken breast or thigh (or 2) coat it liberally with dried basil and pop it into the microwave til cooked.
Let it cool then add to the salad!
Great supper on a hot summer day!!
