Yes, homemade Peppermint Patties!!
Lock the doors and close the curtains…I'd go so far as to post an armed guard! Word gets out you're making these things and chocoholics will be coming from miles around…pounding on your doors, climbing through your windows…hell they'll be parachuting into your back yard!!
The best part is they're easy to make, perhaps too easy!!!

In a bowl combine:
1 pound of icing sugar (500gr)
3 tablespoons of softened butter
2 teaspoons of peppermint extract
1/2 teaspoon of vanilla extract

Add 1/4 cup of evaporated milk and mix well.
Roll into 1 inch balls and place on a wax paper lined cookie sheet.
Chill for 30 minutes.
Remove from fridge and flatten with a glass to 1/4 inch thickness.
I like to take the time to smooth the edges before putting them back in the fridge.
You'll know what I mean, they get kind of ragged when you 'smush' em with the glass!
Chill for minimum 30 minutes.

In a microwave safe bowl:
combine 12 ounces of chocolate chips (300 gr give or take)
2 tablespoons shortening
Heat at 30 second increments until chocolate is melted.
(it won't be too hot to touch!)

Remove patties from fridge about 10 at a time…
if you do more they get warm then it's a pain to dip them as they'll fall apart on ya!!
Now you can TRY to use an implement of some sort for dipping the patties in the melted chocolate but trust me, it's too frustrating!
Just grab 'em with your fingers and dip them, make sure they're totally covered, give them a bit of a gentle shake to get rid of the drips and put them on a wax paper lined cookie sheet to harden.

They only take a few minutes to harden so you won't have to be TOO patient!
