Defense
The best protoss defense you can use at a choke is webbing and storm. Protect a choke with goons and zealots. Have about 6 cosairs and they will be able to make a big patch of webs at the choke. Any ranged unit should not be able to get past the choke or shoot from it. Storm when the enemies buildup and just have the goons perhaps backed by cannons shooting into web. A small army of 10 goons and 6 cosairs should be ample to hold off a brute force attack of at least 50 hydras. Webbing is one of the best defensive abilities of all 3 races. Stasis can work too. Stasis enemies in the choke to make it even smaller and therefore easier to protect. If a zerg uses mass lings, have the web cover the goons you have in the front so the lings can't attack the goons nor walk around it. Make sure there are no leaks in the defense and the goons behind the ones in the front will do the killing for you.
In this pic you get to see the defense in action. At first glance, it may look like protoss is attacking zerg. The gas and the cannon kind of gives it away but this is very similar to an attack. These are the best kinds of defenses. This is what it means for a good offense to be a good defense.
A few goons, 3 webs and some zealots completely crush an incoming army of hydras. The webs have been placed before the hydras came and they are in the web when they try to attack. The zealots act like a wall. The hydras can't really shoot it and it has to move extra to get around it. A templar has stormed into the web to kill them off faster.
In this picture, a few webs and 5 carriers ward off an attack of about 30 dragoons. Of course, you don't see all of them but they are there. Web only what is necessary. There is an open space where the goons can attack the carriers but the opponent knows i'll just web it later if he walks in. Being smart, he leaves to cut his losses.
