Traditional Sake

1 U.S. Gallon

  • 3.3 Pounds of Rice

  • 1 Pound of Koji

  • 1 Gallon of Water

  • 1 Teaspoon of Acid Blend

  • 1 Packet of Sake Yeast (liquid)


 

American Sake

1 U.S. Gallon

  • 3 Pounds White Polished Rice

  • 3 Pounds of White Table Sugar

  • 1 Lemon (Juiced)

  • 1 Gallon of Water

  • 1 Pound of Golden Raisins

  • 1 Teaspoon of Yeast Nutrient

  • 1 Packet of Sake Yeast (liquid)

 


 

American Sake #2

1 U.S. Gallon

  • 2-1/2 pounds, Rice (husked or raw)

  • 1/2 pint, grape concentrate

  • 2 1/2 Pounds Of Clover Honey

  • 3 Teaspoons of Acid Blend

  • 1 Teaspoon of Yeast Energizer

  • 1 Gallon of Water

  • 1 Packet of Sake Yeast (liquid)

 


 

Currant Sake

1 U.S. Gallon

  • 2 1/2 Pounds of Polished White Rice

  • 1 Pound of Currants

  • 3 Pounds Of Alfalfa Honey

  • 1 Lemon (Juiced)

  • 1 Tablespoon of Yeast Energizer

  • 1 Gallon of Water

  • 1 Packet of Sake Yeast (liquid)
