Roots and Barks
- Cinnamon Sticks - Used in spicy holiday ales, wines and ciders.
- Indian Sarsaparilla - An excellent herb for making a root beer base, it
gives root beer that nice thick head.
- Ginger Root - The most widely used herb for brewing.
This rhizome has recently made its way into beers and is now more
popular in brewing than ever.
- Ginseng Root - This root is gaining popularity as it has made its way into
several sodas, wines and beers.
- Licorice Root - This root is extremely sweet and very tasty.
Don’t confuse this with star anise, which a inadequate replication.
Fruit Peels
- Sweet Orange Peel - This sweet variety of peel will give your Belgian or
holiday beer much sought after flavor.
- Bitter Orange Peel - Also known as the Curaco orange peel, these are one
of the most popular specialty herbs best used in Belgian beers.
- Lemon Peel - Mainly used in beers and liquor recipes as well as in mixed
drinks.
- Lime Peel - Used in few beer and wine recipes but used
a lot in mixed drinks.
Seeds and Spices
- Cardamom Seed - A distinctive spice from the same family as ginger.
This seed has been depict as a “spicy cola”, and makes a great
addition to Belgian and Holiday beers.
- Coriander Seed - This seed is traditionally been used in beers to
compliment the flavors of other herbs and spices.
- Paradise Seeds - This seed is traditionally been used to give brews that
pepper flavor with a pine aroma.
- Star Anise - Flavor similar to licorice that is used in Belgian and
holiday beers. Works very well
in root beers and cordials.
- Vanilla Beans - Traditionally used in sodas and cordials, this spice has
made its way into stouts and holiday beers.
Herbs and Flowers

Dried Elderberries - An excellent berry for port wine
and is used in a lot of red wine recipes.

used for making wine and makes a great addition to elderberry wine for
flavor enhancement.

Heather Flowers - Transfers its pleasing bouquet and
hint of sourness in beer and wine.

Juniper Berries - The berry used to flavor Gin has made
its way into brewing beers.

Mint - There are many varieties of this herb and it is
used sparingly in beers but used a lot in sodas, cordials and wines.

Mugwort - Historically, this herb was used in beer
before the acknowledgment of hops. This
herb is still used but not as widely as it used to be.

Rose Hips - This versatile herb can be used wine,
cordials, sodas and beers.

Sweet Gale - This herb with its perfumed wood and
leaves is primarily used in British beers.

Wintergreen Leaves - Not to be confused with mint, the
wintergreen is used in sodas and wines.
