Admiral - A excellent compliment hop to Target hops. Good dual purpose hop. A.A.U. is usually 11 - 15%.

Ahtanum - This is grown in small quantities for now. Fruity flavors and a spicy aroma. A.A.U. is about 3.5 - 6%.

Amarillo - Similar to Cascade hops in aroma. A.A.U. is about 6 - 7%

Aquila - Recently developed as an aromatic hop originating in the U.S.A. A.A.U. is around 6 - 7.5%.

Aurora - A good aroma hop that is great in US style Pilsner beers with an A.A.U. of 3 - 5%.

Banner - Another more recently developed hop from the U.S.A. Used primarily as a bittering hop. A.A.U. is 9.5 - 10.5%.

Bramling Cross - A hybrid version of Goldings. An excellent finishing hop for ales. A.A.U. is 5 - 6%.

Brewers Gold - This hop can be used as an all around bittering hop but it is commonly found in German lagers and English ales. A.A.U. is 6 - 10%.

British Columbian Goldings - Similar to the East Kent Goldings hop. This hop is for pale ale, bitters, porters, and stouts. An excellent hop for the dry hopping process (very well rounded hop). A.A.U. is 4 - 6%.

Bullion - This hop is can be very bitter, flavorful, and spicy. This hop is an excellent hop that should be used for bittering. A.A.U. is 5 - 10%.

Cascades - A Fuggle hybrid that is versatile and citrusy. Great flavoring and aroma but can be used for bittering as well. A.A.U.is 4 - 7%.

Centenials - An excellent bittering hop but if used sparingly can be used as an aeromatc hop. A.A.U. is 9 - 11%.

Challengers - Used in the U.K. as a bittering hop in many ales and in many Belgian ales. A.A.U is 7 - 10%.

Chinook - Interchangeable with the Bullion hop but a lot bitter. A.A.U. is 11 - 14%.

Cluster - An all around good hop with great aroma and flavor. A.A.U. is 5 - 8%.

Columbia - If you can't get this hop, use Centenial as a substitute. Very pungent, aromatic, and clean tasting. Best used in ales, porters and stouts. A.A.U. is 12 - 16%.

Columbus - An excellent all purpose hop with an A.A.U. around 5%.

Comet - Difficult to obtain the U.S., this hop is primarily used for its bittering character. A.A.U. is 8 - 11%

Crystal - A new strain of hop known for its flavor and aroma. A.A.U. is 2 - 5%.

East Kent Goldings - Same as British Columbia Goldings.

Eroica - Bittering and if used for aroma or flavor use sparingly. A.A.U. is 10 - 14%.

First Gold - Aroma is similar to Goldings but has a higher A.A.U.(usually 6.5 - 8.5), a good all-purpose hop.

Fuggles - This is a classic and my favorite, I use it for a variety of brews. This hop has a mild and woody aroma that is especially good in English ales, pale ales, porters and stouts. A.A.U. is 4 - 6%.

Galena - A very popular bittering hop that is used in many American ales and lagers. A.A.U. is 11 - 14%.

Goldings - Another Great hop that can be used in any brew. This hop comes in three varieties: The East Kent Goldings, Kent Goldings, and U.S. Goldings. A.A.U. is 4 - 7%

Green Bullet - An Australian hop that is used in Aussie ales and lagers. A.A.U. is 9 - 11%.

Hallertauer - A nice mellow hop that can be used in altbiers, belgian ales, and lagers. There are 5 varieties of this type: German Hallertauer, Mittelfruh, Traditional Hallertauer, U.S. Hallertauer, Hallertauer New Zealand,,and Hersbrucker. A.A.U. ranges from 2 - 7%.

Herkules - A good all purpose hop with an average aroma. A.A.U. is 10 - 14%.

Horizon - A hybred of Brewers gold and German Hallertauer aromatic hop. A.A.U. is 12 - 14%.

Huller - Another well-rounded hop for both bittering and aroma. A.A.U. is 4 - 6%.

Liberty - An excellent finishing hop that is widely used in American and German ales and lagers. A.A.U. is 4 - 5%.

Lublin - A Czech Saaz hop that has been grown in Poland. Ideal for Pilsners and Belgian ales. A.A.U. is 3 - 5%.

Magnum - This has excellent bittering qualities that can also be used as an aromatic. A.A.U. is in the range of 12 - 14%.

Magnum V 2.0 - Another excellent bittering hop that can also be used as an aromatic. A.A.U. is in the range of 9 - 11%.

Millennium - Another hybrid hop reminds me of Tettnanger. An good finishing hop for ales. A.A.U. is 5 - 6%.

Mt. Hood - An American version of the Hallertauer hop that is mainly used for aroma and flavor. A.A.U. is 4 - 6%.

Northdown - Another well-rounded hop with an A.A.U. of 8 - 11%.

Northern Brewers - This hop comes in many different strains and is good in many beers. A.A.U. of 7 - 11%.

Nugget - Very bitter hop that is good in medium to dark amber beers. A.A.U. 11 - 16%.

Olympic - Difficult to obtain and is similar to Brewers gold. A.A.U. of 11 - 14%.

Omega - An excellent bittering hop with an A.A.U. in the range of 9 - 11%.

Opal - An all around good hop with great aroma and flavor. A.A.U. is 5 - 8%.

Orion - An all around good hop with good bittering qualities. A.A.U. is 6 - 8%.

Pacific Gem - This is a New Zealand hop that has a good bitterness and aroma. A.A.U. is about 14%.

Pearl - A Hallertau/Northen Brewer hybrid hop, primarily used for bittering. A.A.U. ranges from 6 - 11%.

Phoenix - This is a strain from the Yeomans hop. Excellent bittering and aromatic purpose hop. A.A.U. around 8 - 12%.

Pride of Ringwood - A Tasmanian hop that is difficult to get in the U.S.A. This hop is great in British ales, Australian ales, and lagers. A.A.U. ranges from 8 - 10%.

Progress - This hop is mainly used as an aroma hop. A.A.U. is 6 - 7%.

Saaz - This hop dates back to being used 150 years ago. Aromatic, spicy, and flavorful; this hop is good to use in Lagers and Wheats with an A.A.U. of 3 - 6%.

Santiam - This is a hybrid of Tettnanger, Mittelfruh, Cascades, and who knows what else. Aroma is a suggestion of Tettnanger with an A.A.U. of 5.5 - 8%.

Saphire - An all around good hop with great aroma and flavor. Goes great with Lagers.  A.A.U. is 6.5 - 8%.

Southern Cross - This is pretty bitter New Zealand hop with an A.A.U. at 12%.

Spalter - If you can't get Saaz hops, try this one for a perfect alternative. Aromatic and flavorful with an A.A.U. of 4 - 5%.

Spalter Select - Similar to the Spalter hop but bred mainly as an aroma hop. A.A.U. in the range of 4 - 6%.

Sterling - A good hop with great aroma, great for Aromatic and flavor. A.A.U. is 5 - 7%.

Sticlebract - A very popular hop from Australia and New Zeland. Somewhat difficult to obtain in the U.S.A. Good in American ales and lagers with an A.A.U. of 9 - 10%.

Strissel Spalt - A good aroma hop that is great in Pilsner and Belgian ales with an A.A.U. of 3 - 5%.

Styrian Goldings - This hop is a transplanted Fuggles grown in Hungary. Pleasant aroma and good bittering, not to harsh with an A.A.U. in the range of 3 - 7%.

Sun - A very bitter hop with a high A.A.U. of 15 - 16%.

Super High Alpha - An excellent bittering hop with an A.A.U. in the range of 9 - 11%.

Super Pride - This hop is great in British ales, Australian ales, and lagers. A.A.U. ranges from 10 - 12%.

Super Styrians - These have a higher alpha content than regular Styrians. Rich full flavor similar to Northern brewers with an A.A.U. of 8 - 10%.

Target - A bittering hop this can be difficult to find in the U.S.A. Can be used in British ales and lagers with an A.A.U. 9 - 13%.

Taurus - An all around good bittering hop with good and flavor. A.A.U. is 7 - 8%.

Tettnanger - Mild floral and very aromatic and can be used to replace Spalter and vice versa. A good finishing hop with an A.A.U. of 3 - 5%.

Ultra - A hybred of Hallertau and Saaz. A high floral aroma best used with light pilsners and light lagers. A.A.U. of 3 - 4%.

U.S. Strisselspalt - Used manly as an aroma hop since it only has an A.A.U. of 2 - 2.5%.

Vanguard - Characteristics similar to Mittelfruh and Saaz in aroma, with an A.A.U. of 4 - 6%.

Warrior - Another more recently developed hop from the U.S.A. Used primarily as a bittering hop. A.A.U. is 8 - 10%.

Willamette - Can be interchanged with Fuggles. This hop has a spicy aromatic finish with an A.A.U. 4 - 6%.

Yeoman - A popular bittering hop in the U.K., similar to the Target hop. Difficult to obtain in the U.S.A. with an A.A.U. of 9 - 14%.

Zenith - Excellent aromatic hop with an A.A.U. of 9 - 10%.
