Pulque
Traditional
1 U.S. Gallons

7 Pints of Maguey
Sap

1 and 1/2 pounds
of sugar

3/4 teaspoon of
Acid Blend

1 teaspoon of
Pectic Enzyme

1 teaspoon of
Yeast Nutrient
-
1/4 teaspoon of
Grape Tannin

1 Campden tablet
-
5 Grams of Red
Star Montrachet Yeast
OK, I only had 1
actual recipe for making Pulque. So I have added some mixed
drink recipes that use pulque. Enjoy.
Pulque Mary
Fill a cocktail
shaker with ice.
Add Pulque, vodka and bloody Mary mix, shake until cold.
Pour into a chilled tall glass and garnish with Celery stick (with
leaves), Lemon wedge and green olive on a toothpick.
Coco Nutty
Fill a pint glass
with ice.
Add in Pulque, almond liqueur and syrup and garnish with toasted
almonds and / or coconut.
Coco Azul
Fill a pint glass
with ice.
Add in Pulque, Curacao and syrup and garnish with shaved coconut.
Lemon Drop
Fill a cocktail
glass with ice.
Add in Pulque, Vodka and syrup
Squeeze and drop lemon into shaker glass and shake until cold.
Strain into chilled martini glass rimmed with superfine sugar.
Garnish with lemon twist.
Hot Mango

4 ounces of
Pulque
-
2 ounce of Mango
Juice
-
1 ounce of
Tequila (sauza)
-
2 to 3 dashes of
Choula hot sauce (to taste)
-
1/2 to 1 ounce of
simple syrup
Fill a pint glass
with ice.
Add in Pulque, juice, Tequila, hot sauce (use Choula not that other
wimpy stuff) and syrup and stir until cold.
Garnish with mango wedge and / or chili pepper
Pocket Pulque
(get it Pocket Pool Que)
Fill a pint glass
half full with ice.
Add in Pulque, juice, Vodka, Coffee Liqueur, Peppermint Schnapps and
Light Cream and stir until cold.
Pulquerita
Fill a cocktail
shaker with ice.
Add juice, syrup, Pulque, Tequila and Triple Sec.
Cap and shake until very cold.
Pour into chilled rocks glass and server with a wheel of lime on the
rim of the glass.
Mojito Pulque
Tear and drop
mint sprigs into a shaker glass filled with ice.
Add Pulque, White Rum and syrup. Cap and shake until very cold.
Pour into pint glass and garnish with a fresh mint sprig.
