I wanted to create a cookie that was light in sugar but high in taste. 1/2 cup butter, softened 1/2 cup packed light brown sugar 1 egg, beaten 11/2 cup all purpose flour 3/4 cup Graham cracker crumbs (if you have Graham crackers on hand, crumble two of those) 11/2 tsp cinnamon 1 tsp. baking soda 1/4 cup honey 1 tsp. vanilla or vanilla extract Cream butter, sugars, honey, and vanilla with an electric beater (if you have one) until the mixture is light and fluffy. Beat in egg, flour, baking soda, cinnamon, and Graham Cracker Crumbs. Shape dough into 1 inch balls. Press cookie down with a fork cross wise. Bake 8-10 min. in 350 degree oven until the edges of cookies are lightly brown. Remove from cookie sheet and cool on wire racks. Makes 2 dozen cookies. |
