![]() This recipe came about as I tried to create a healthier cookie. This cookie is fairly low in sugar, and sometimes high in fibre. I say sometimes because the amount of fibre in your granola will vary depending on the type of granola you buy or make. If you are looking for a healthy granola,visit I make my own and include All Bran Cereal to increase the amount of fibre. On with the recipe 1 cup all purpose white flour 1 cup whole wheat flour 1/4 tsp. salt 1/2 tsp. baking soda 1/2 cup brown sugar (not packed) 1/4 cup light molasses 1 3/4 tsp. vanilla extract 3 eggs 11/2 cups granola 1/2 cup creamy peanut butter (If you only have crunchy, use it) 1 cup butter, softened Preheat oven to 325 degrees. In a bowl place the flour, salt, and baking soda. Mix together then set aside. In another bowl place the butter, and brown sugar. Cream this together. Add the eggs, vanilla, molasses, peanut butter and granola. Stir this together. Once this is mixed, add the flour mixture and stir until all ingredients are combined. Spoon onto ungreased cookie sheets. Bake for 15-20 minutes. Makes 3 dozen |
