1 egg 1 cup milk 1/4 cup vegetable oil 2 cups all purpose flour 1/4 cup pineapple juice 1/4 cup sugar 3 tsp baking powder 1 tsp. salt 1/4 cup honey 1/2 cup peanut butter 1 banana, mashed In a medium sized bowl, place the banana, peanut butter, honey and pineapple juice. Stir this mixture until it is pretty well blended. In a large bowl, place the egg, milk, and the vegetable oil. Beat this with a whisk or fork until blended. Now, to this add the sugar, flower, salt, and baking powder. Stir this until it is combined. At this time add the peanut butter mixture. Stir again to combine. It should be a little lumpy. Grease a 12 ct. muffin tin. Pour the batter into each, filling 3/4 full. Cook in preheated 400 degree oven for 20-25 minutes. Makes 12 muffins Preparation time 35 min. |
