Tropical Delight Muffins
This muffin recipe is relatively low in sugar. I used 1/2 cup but you can reduce that to 1/4 cup if sugar is an issue for your family. The fruit and the graham cracker crumbs will make up the sweetness.

1/2 cup or 1 small peach, peeled and chopped
1/4 cup mango, peeled and chopped
1/4 cup crushed pineapple (if you only have sliced, chopped it small)
1 cup milk
3 tsp. baking powder
1 tsp. salt
1 egg
1 1/2 cups white flour
1/2 cup whole wheat flour
1/2 cup sugar
1/2 cup graham cracker crumbs (you can just crush he equivalent of 2 graham crackers)
1/4 cup vegetable oil

In  a small bowl, combine the milk, oil, and egg. Whisk until combined.
In a large bowl combine the sugar, baking powder, flour, salt, and graham cracker crumbs. Stir to mix together.
Add the wet ingredients to the dry as well as the fruit. Stir once again until all ingredients are combined. Spoon into a greased muffin tin.
Cook in a preheated 350 degree oven for 20 minutes.
Makes 12 muffins.
