2 cups grated carrot |

1/8 tsp. ground nutmeg |

1/8 tsp. ground cinnamon |

1 tbs brown sugar |

1/2 tbs. margarine or butter |

1/2 cup pineapple juice |
 |

2 eggs, lightly beaten |

1/3 cup oil |

1/4 cup milk |

2 cups all purpose flour |

1 cup sugar |

1 tsp. baking powder |
 |

1/8 tsp. salt |
In a saucepan, place carrot, nutmeg, cinnamon, brown sugar and margarine. Cook on Medium high, for 5 minutes, stirring frequently. Remove from the heat and set aside.
In a large bowl combine flour, sugar, baking powder, and salt. Stir to combine.
In another bowl combine eggs, vegetable oil, pineapple juice, and milk. Stir to combine. Add the carrot mixture and stir once again.
Pour the wet ingredients into the dry ingredients and stir until the batter is moist.
Pour into a greased loaf pan, and bake in a pre heated 350 degree oven for 1 hour or until a knife inserted in the middle comes out clean.
