3 eggs 3/4 cup plain yogurt 1/4 cup white sugar 1/3 cup brown sugar 1/4 tsp. nutmeg 1/4 tsp. ground cinnamon 1 tsp. vanilla 1 1/2 cups solid pack pumpkin 2 cups graham crackers, crushed 1/3 cup melted butter or margarine 1/4 cup sugar(optional) I thought this recipe through for a week before I made it and I still forgot the graham crackers for the crust. It was a Saturday morning and I wasn't going back to the store for one item! I looked in my cupboards and I found some All Bran cereal and some of my son's graham cereal (Groovy Grahams) . I combined 1 cup of the graham cereal and 1 cup of the All Bran cereal, margarine and 1/4 cup sugar. It turned out fine. The moral to this story is that you don't neccessarily have to have exactly what a recipe calls for, sometimes you can just wing it with what you have on hand. Now on with the recipe. In a medium sized bowl, combine the eggs, cream cheese (slightly softened), yogurt, sugars, nutmeg. cinnamon and vanilla, and pumpkin. Mix with an electric mixer for about 5 minutes or until all the ingredients are blended. Set aside. To prepare the crust, place the crushed graham crackers in a bowl and add the melted butter and the sugar. Mix well and place the crust in a greased 9 inch springform pan. Pat the crust down to make sure it is level. Place this into a preheated 350 degree oven and cook for 5 minutes. Remove from the oven. Pour the cheesecake mixture over the crust mixture and place it back in the oven and bake it for roughly an hour. Check it after 45 minutes. Every oven is different. Let the cheesecake cool then refrigerate until you need it. Enjoy! |
