1 egg 1 cup milk !/4 cup vegetable oil 1 cup white all purpose flour 1 cup whole wheat flour 3 tsp. baking powder 1 tsp. salt 1/2 cup your favourite breakfast cereal 1/4 cup regular rolled oats 1/4 cup packed brown sugar 1/4 cup your favorite dried fruit (chop into small pieces if you need to) 1/4 cup honey This recipe is very versatile. My first time around I used a granola cereal and cranberries for the dried fruit. These muffins are relatively low in sugar and the whole wheat adds extra fibre. In a bowl combine the egg, oil, milk and honey. Beat this with a wire whisk until it is combined. In a large bowl combine the flour, brown sugar, rolled oats, breakfast cereal, baking powder, salt, and the dried fruit. Stir the dry ingredients until all mixed up. Pour the wet ingredients into the dry and stir until all is combined. Grease 12 muffin tins. Pour batter into the muffin tins. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean. |
