At my husbands request I promised to focus on making baked goods that are low in fat and sugar. The recipe for this favorite is low in fat and sugar, and high in fibre. The graham crackers add a little sweetness without the need for excess sugar. I hope you enjoy it. 1 egg 11/4 cup milk 1/4 cup white flour 11/2 cups whole wheat flour 1/4 cup packed brown sugar 1/4 cup raisins and or dried cranberries 1/4 cup light molasses 1 cup all bran cereal 2 tbs. wheat germ 2 graham crackers, crushed 1 tsp. salt 3 tsp. baking powder 1/4 cup canola oil In a small bowl combine the egg, oil, milk, and molasses. Whisk or stir with a fork. In a large bowl combine the remaining ingredients, except the raisins/cranberrries. Add the wet ingredients to the dry and mix. Add the raisins/cranberries and mix once again to combine. Lightly spray a 12 tin muffin tin with nonstick cooking spray. Spoon the batter into the tin equally. Place the muffins in a preheated 350 degree oven for 20-25 minutes. Makes 12 Preparation time 10 minutes, cooking time 20-25 minutes Enjoy! |
