Apple Muffins

1 egg
1 cup milk
1/4 cup vegetable oil
1 cup white all purpose flour
1 cup whole wheat flour
1/4 tsp. cinnamon
1/4 cup brown sugar
3 tsp. baking powder
1 tsp. salt
1/4 tsp. cinnamon
2 apples, peeled, and sliced
2 tsp. lemon juice
1/2 cup rice krispies (generic brands work just as well)
brown sugar for sprinkling on top

Place the sliced apples in a frying pan (non-stick if you have it), pour the lemon
juice over them and sprinkle 1/4 tsp. cinnamon over apples. Stir the apples with a spoon to make sure they are coated with lemon juice and cinnamon. Cook the apples at medium high heat for a few minutes. Set this aside.
In a large bowl, combine the flour, baking powder, salt, brown sugar,  cinnamon, and crisped rice. Stir the dry ingredients together. In another bowl, combine the egg, oil, and the milk. Stir this up briefly as well. Pour the wet ingredients into the bowl containing the dry ingredients. You can add the apples at this time as well.
Stir this just enough to make sure all is mixed.
Pour batter into greased muffin tins.
This makes 12 muffins.
