Blueberry Muffins
These muffins are low in sugar. I have used the granola and the blueberries as a substitute for the sweetness of the sugar.  By using whole wheat flour I have also made these muffins a good source of fibre.


1 cup fresh or thawed frozen blueberries
1 cup plus 1 tbs. milk
1/4 cup vegetable oil
1 cup white flour
1 cup whole wheat flour
1/2 cup your favorite granola
1/3 cup white sugar
1 tsp. salt
3 tsp. baking powder
1 egg
1 tbs. honey

Preheat oven to 350 degrees. In a bowl place the vegetable oil, milk, egg, and honey. Whisk this together until it is combined. In another bowl place the remaining ingredients except the blueberries. Stir together the dry ingredients until they are combined. Pour the wet ingredients into the dry and stir together until combined. Add the blueberries just until combined. Pour the batter into 12 greased muffin tins. Bake at 350 degrees for 25 minutes.
