Matter of Taste by Matthew Sutherland
I have now been in this country for over six years, and consider myself in most respects well assimilated. However, there is one key step on the road to full asimilation, which I have yet to take, and that's to eat BALUT. The day any of you sees me eating balut, please call immigration and ask them to issue me a Filipino passport. Because at that point there will be no turning back. BALUT, for those still blissfully ignorant non-Pinoys out there, is a fertilized duck egg. It is commonly sold with salt in a piece of newspaper, much like English fish and chips, by street vendors usually after dark, presumably so you can't see how gross it is. It's meant to be an aphrodisiac, although I can't imagine anything more likely to dispel sexual desire than crunching on a partially formed baby duck swimming in noxious fluid. The embryo in the egg comes in varying stages of development, but basically it is not considered macho to eat one without fully discernable feathers, beak, and claws. Some say these crunchy bits are the best. Others prefer just to drink the so-called 'soup', the vile, pungent liquid that surrounds the aforementioned feathery fetus...excuse me; I have to go and throw up now. I'll be back in a minute.
Food dominates the life of the Filipino. People here just love to eat. They eat at least eight times a day. These eight official meals are called, in order: breakfast, snacks, lunch, merienda, pica-pica, pulutan, dinner, and no-one-saw-me-take-that-cookie-from-the-fridge-so-it-doesn't-count . The short gaps in between these mealtimes are spent eating Sky Flakes from the open packet that sits on every desktop. You're never far from food in the Philippines. If you doubt this, next time you're driving home from work, try this game. See how long you can drive without seeing food and I don't mean a distant restaurant, or a picture of food. I mean a man on the sidewalk frying fish balls, or a man walking through the traffic selling nuts or candy. I bet it's less than one minute.
Here are some other things I've noticed about food in the Philippines. Firstly, a meal is not a meal without rice - even breakfast. In the UK, I could go a whole year without eating rice. Second, it's impossible to drink without eating. A bottle of San Miguel just isn't the same without gambas or beef tapa. Third, no one ventures more than two paces from their house without baon and a container of something cold to drink. You might as well ask a Filipino to leave home without his pants on. And lastly, where I come from, you eat with a knife and fork. Here, you eat with a spoon and fork. You try eating rice swimming in fish sauce with a knife.
One really nice thing about Filipino food culture is that people always ask you to SHARE their food. In my office, if you catch anyone attacking their baon, they will always go, "Sir! KAIN TAYO!" ("Let's eat!"). This confused me, until I realized that they didn't actually expect me to sit down and start munching on their boneless bangus. In fact, the polite response is something like, "No thanks, I just ate."
But the principle is sound - if you have food on your plate, you are expected to share it, however hungry you are, with those who may be even hungrier. I think that's great. In fact, this is frequently even taken one step further. Many Filipinos use "Have you eaten yet?" ("KUMAIN KA NA?") as a general greeting, irrespective of time of day or location.
Some foreigners think Filipino food is fairly dull compared to other Asian cuisines. Actually lots of it is very good: Spicy dishes like Bicol Express (strange, a dish named after a train); anything cooked with coconut milk; anything KINILAW; and anything ADOBO. And it's hard to beat the sheer wanton, cholesterolic frenzy of a good old-fashioned LECHON de leche feast. Dig a pit, light a fire, add 50 pounds of animal fat on a stick, and cook until crisp. Mmm, mmm... you can actually feel your arteries constricting with each successive mouthful.
I also share one key Pinoy trait ---a sweet tooth. I am thus the only foreigner I know who does not complain about sweet bread, sweet burgers, sweet spaghetti, sweet banana ketchup, and so on. I am a man who likes to put jam on his pizza. Try it!
It's the weird food you want to avoid. In addition to duck fetus in the half-shell, items to avoid in the Philippines include pig's blood soup (DINUGUAN); bull's testicle soup, the strangely-named "SOUP NUMBER FIVE" (I dread to think what numbers one through four are); and the ubiquitous, stinky shrimp paste, BAGOONG, and it's equally stinky sister, PATIS. Filipinos are so addicted to these latter items that they will even risk arrest or deportation trying to smuggle them into countries like Australia and the USA, which wisely ban the importation of items you can smell from more than 100 paces.
Then there's the small matter of the blue ice cream. I have never been able to get my brain around eating blue food; the ubiquitous UBE leaves me cold.
And lastly on the subject of weird food, beware: that KALDERETANG KAMBING (goat) could well be KALDERETANG ASO (dog)...
The Filipino, of course, has a well-developed sense of food. Here's a typical Pinoy food joke: "I'm on a seafood diet. "What's a seafood diet?" "When I see food, I eat it!"
Filipinos also eat strange bits of animals --- the feet, the head, the guts, etc., usually barbecued on a stick. These have been given witty names, like "ADIDAS" (chicken's feet); "KURBATA" (either just chicken's neck, or "neck and thigh" as in "neck-tie"); "WALKMAN" (pigs ears); "PAL" (chicken wings); "HELMET" (chicken head); "IUD" (chicken intestines), and BETAMAX" (video-cassette-like blocks of animal blood). Yum, yum. Bon appetit.

WHEN I arrived in the Philippines from the UK six years ago, one of the first cultural differences to strike me was names. The subject has provided a continuing source of amazement and amusement ever since.
The first unusual thing, from an English perspective, is that everyone here has a nickname. In the staid and boring United Kingdom, we have nicknames in kindergarten, but when we move into adulthood we tend, I am glad to say, to lose them.
The second thing that struck me is that Philippine names for both girls and boys tend to be what we in the UK would regard as overbearingly cutesy for anyone over about five. Fifty-five-year-olds colleague put it. Where I come from, a boy with a nickname like Boy Blue or Honey Boy would be beaten to death at school by pre-adolescent bullies, and never make it to adulthood. So, probably, would girls with names like Babes, Lovely, Precious, Peachy or Apples. Yuk, ech ech.
Here, however, no one bats an eyelid. Then I noticed how many people have what I have come to call "door-bell names". These are nicknames that sound like -well, doorbells. There are millions of them. Bing, Bong, Ding, and Dong are some of the more common. They can be, and frequently are, used in even more door-bell-like combinations such as Bing-Bong, Ding-Dong, Ting-Ting, and so on. Even our newly appointed chief of police has a doorbell name Ping. None of these doorbell names exist where I come from, and hence sound unusually amusing to my untutored foreign ear.
Someone once told me that one of the Bings, when asked why he was called Bing, replied, "because my brother is called Bong". Faultless logic. Dong, of course, is a particularly funny one for me, as where I come from "dong" is a slang word for well; perhaps "talong" is the best Tagalog equivalent.
Repeating names was another novelty to me, having never before encountered people with names like Len-Len, Let-Let, Mai-Mai, or Ning-Ning. The secretary I inherited on my arrival had an unusual one: Leck-Leck. Such names are then frequently further refined by using the "squared" symbol, as in Len2 or Mai2. This had me very confused for a while.
Then there is the trend for parents to stick to a theme when naming their children. This can be as simple as making them all begin with the same letter, as in Jun, Jimmy, Janice, and Joy.
More imaginative parents shoot for more sophisticated forms of assonance or rhyme, as in Biboy, Boboy, Buboy, Baboy (notice the names get worse the more kids there are-best to be born early or you could end up being a Baboy).
Even better, parents can create whole families of, say, desserts (Apple Pie, Cherry Pie, Honey Pie) or flowers (Rose, Daffodil, Tulip). The main advantage of such combinations is that they look great painted across your trunk if you're a cab driver. That's another thing I'd never seen before coming to Manila -- taxis with the driver's kids' names on the trunk.
Another whole eye-opening field for the foreign visitor is the phenomenon of the "composite" name. This includes names like Jejomar (for Jesus, Joseph and Mary), and the remarkable Luzviminda (for Luzon, Visayas and Mindanao, believe it or not). That's a bit like me being called something like "Engscowani" (for England, Scotland, Wales and Northern Ireland). Between you and me, I'm glad I'm not.
And how could I forget to mention the fabulous concept of the randomly inserted letter 'h'. Quite what this device is supposed to achieve, I have not yet figured out, but I think it is designed to give a touch of class to an otherwise only averagely weird name. It results in creations like Jhun, Lhenn, Ghemma, and Jhimmy. Or how about Jhun-Jhun (Jhun2)?
How boring to come from a country like the UK full of people with names like John Smith. How wonderful to come from a country where imagination and exoticism rule the world of names.
Even the towns here have weird names; my favorite is the unbelievably named town of Sexmoan (ironically close to Olongapo and Angeles). Where else in the world could that really be true? Where else in the world could the head of the Church really be called Cardinal Sin? Where else but the Philippines!

Also, I passed by Irisan and I saw a LUNA Street. Hindi na nag-iisa si Joy na may NACNAC Street which is very near where Otisamot lives. Actually the street is named after her grandpa, Faustino (?) Nacnac who was one of the original settlers of Baguio along with Juan Resureccion, but of course the namesake of El Presidente dictador Administrator. Joys gramps became chief of the Constabulary while Ressureccion got connected with the Benguet Auto Line and other companies.

To be honest, I asked myself if I will not feel out of place joining the group, since you share a lot of common things in the past, where I may not a part of those activities, having left the school at the start of our 3rd year. Nevertheless, I have maintained friendships with some of you guys, like Lettie. And of course, everytime I meet our former classmates like Sammy, Howard, Vivienne, Nathan, Evelyn, etc. . . . there’s still that warmth of having known each other in the past. And so with our former teachers too in high school. When I came to be one of them when I got connected with the U.B. College of Dentistry. So despite the incomplete years, I feel I belong.. .. Like Nathan who left the school before graduation, I left too at the start of our 3rd year, by force of circumstances as I had to look after my ailing grandparents who were living in the province. As the story goes, maybe you call it destiny or whatever, I got married when I was in the 4th year and had my first kid at the age of 16 ! would you believe that ! maagang kumarinking daw sabi ni Lettie. Well ganun talaga ang buhay when fate strikes, things just happen and before you know it you’re faced with a situation favorable or unfavorable, you have to deal with it and survive ! Anyway, as a cooperative being, I went the flow of events and one thng led to another until I found myself-being a single parent to two kids quite early, but life has to move on and now I can say, I am a proud mother to two grown up men, Ian Steve who graduated from UERM is now a dentist, manning our clinics. And Mark Aaron who just graduated last February from La Salle with a degree in Finance Management. Both by the way are your co-alumni having graduated from UB-Science High. They were the ones who told me that Sir Emmet remembers our batch well, because you guys started a lot of things daw pati kalokohan siguro? And life didn’t stop there for me being a mother only. Now Im happy young grandma! (with emphasis on the young) to Igi and newly born Ira, the kids of Ian and Che, my daughter in l aw who’s U.B Science Hi alumnus as well. He he he ! That’s my life’s synchronicity kuno. And looking back to my “colorful past” no regrets for I am what I am owing it to those turn of events. As they say, ganun talaga and buhay we go through the straight and crooked paths, as we keep on growing up, making us survivors in our own way . . . in the end we gain character. I enjoyed a late dinner with Lettie last Friday in her cozy and beautiful (36th floor) condominium at Boni, Ortigas. I say beautiful, cause you get a good view of Metro Manila, especially the sunset of Manila Bay. Guys we should tell her that next venue of our meeting will be in her place, so we can discuss a lot of things over a cup of Nestle coffe or ice cream? Anyway, in the course of our sharing we talked about the idea of our group pursuing some future activities beyond what we are doing now of exchanging emails. I had been always a believer of the idea that “nothing happens by accident in this universe” seemingly coincidental, but it is as it should be . Thus, I do believe that we were meant to regroup ourselves now as professionals maybe for a higher purpose. All of us, I believe are accomplished in our fields with talents to share in whatever way we can. I hope we can brainstorm on this next time around and come up with a project that can further get the group towards a noble goal. . what do you think? I just related to Lettie that I attended the wake of the best friend of my late brother who passed away last week, Mr. Frank Longid, an accomplished Igorot businessman, who made it big in the world of business but was generous enough to share what he had so left a legacy. . . a life worth emulating. In the series of eulogies accorded to him, its moving to know that here is a person who is not a politician yet he has touched many lives by sharing his success with others. Well, well, simple as we are, maybe who knows as a group we can in our humble way, be able to touch other peoples lives, as well. So guys am ope to suggestions. . . And before I end let me share with you some quotations I picked up from the theosophical digest: If the world is to be healed through human efforts, I am convinced it will be by ordinary people, people whose love for life is even greater than their fear. And so with our former teachers too in high school, I got connected with the U.B. College of Dentistry. So despite the incomplete years, I feel I belong.. .. Like Nathan who left the school before graduation, I left too at the start of our 3rd year, by force of circumstances as I had to look after my ailing grandparents who were living in the province. As the story goes, maybe you call it destiny or whatever, I got married when I was in the 4th year and had my first kid at the age of 16 ! would you believe that ! maagang kumarinking daw sabi ni Lettie. Well ganun talaga ang buhay when fate strikes, things just happen and before you know it you’re faced with a situation favorable or unfavorable, you have to deal with it and survive ! Anyway, as a cooperative being, I went with the flow of events and one thng led to another until I found myself-being a single parent to two kids quite early, but life has to move on and now I can say, I am a proud mother to two grown up men, Ian Steve who graduated from UERM is now a dentist, manning our clinics. And Mark Aaron who just graduated last February from La Salle with a degree in Finance Management. Both by the way are your co-alumni having graduated from UB-Science High. They were the ones who told me that Sir Emmet remembers our batch well, because you guys started a lot of things daw pati kalokohan siguro? And life didn’t stop there for me being a mother only. Now Im happy young grandma! (with emphasis on the young) to Igi and newly born Ira, the kids of Ian and Che, my daughter in l aw who’s U.B Science Hi alumnus as well. He he he ! That’s my life’s synchronicity kuno. And looking back to my “colorful past” no regrets for I am what I am owing it to those turn of events. As they say, ganun talaga and buhay we go through the straight and crooked paths, as we keep on growing up, making us survivors in our own way . . . in the end we gain character. I enjoyed a late dinner with Lettie last Friday in her cozy and beautiful (36th floor) condominium at Boni, Ortigas. I say beautiful, cause you get a good view of Metro Manila, especially the sunset of Manila Bay. Guys we should tell her that next venue of our meeting will be in her place, so we can discuss a lot of things over a cup of Nestle coffe or ice cream? Siguradong maraming supply being a top VP of NESTLE. Anyway, in the course of our sharing we talked about the idea of our group pursuing some future activities beyond what we are doing now of exchanging emails. I had been always a believer of the idea that “nothing happens by accident in this universe” seemingly coincidental, but it is as it should be . Thus, I do believe that we were meant to regroup ourselves now as professionals maybe for a higher purpose. All of us, I believe are accomplished in our fields with talents to share in whatever way we can. I hope we can brainstorm on this next time around and come up with a project that can further gel the group towards a noble goal. . what do you think? I just related to Lettie that I attended the wake of the best friend of my late brother who passed away last week, Mr. Frank Longid, an accomplished Igorot businessman, who made it big in the world of business but was generous enough to share what he had and so left a legacy. . . a life worth emulating. In the series of eulogies accorded to him, its moving to know that here is a person who is not a politician yet he has touched many lives by sharing his success with others. He made a great impact on the many lives of my co-igorots. Well, well, simple as we are, maybe who knows as a group we can in our humble way, be able to touch other peoples lives, as well. So guys am open to suggestions. . . yesterday, i had a chance to talk to evelyn and carmen, my oh my what a great feeling hearing the familiar voices of long lost friends, we talked about the past, present and future and like brenda they too had colorful stories to share. remember the song love story we used to sing it to annoy carmen, what about playing that song during reunion, on second thoughts huwag na lang maka magwalk out si carmen kasalanan ko pa. ha ha ha. my conversation to evelyn was cut short i think her cell battery run out cause when i tried calling her back no tone. i had asked her if she'll be logging on the website she said she will , she got buddy's email just like the rest of us busy ang life niya she will though. in time i will try to talk to you all just to hear the laughter and the memories.
seriously i agree with brenda our gathering has a purpose , I know chatting with you guys sure did bring back memories that added a spice in my life, i know out there i can share my thoughts and feelings to friends that care, so we did touch each other lives now we can extend in our own humble ways touch other people lives too, what about starting with emmet, i heard bits and pieces of his dilemma from joy and carmen is there anything we can do to help him , let me know powerful friends.

Me, of all persons, you would know I could not offer much in terms of finances but I could perhaps tap on some networks for the sake of all. If the place is free, baka ma-ioffer ko yung training center namin sa harap ng Mansion for visiting friends depende sa reunion committee. There is a large frontage where we could have a bonfire. Your place, Let, is als large and we could also have a bonfire there, di ba? Best of all is to enlist the batch in a cause. Perhaps for Emmett, perhaps for a scholarship for an indigent or maybe even for a batchmate's child or for any such other cause we could think of.
FYI, science hi fees now range from 12 to 36 thousand which, by my standards, is already way beyond what I could afford on my gov't employee salary...

Nakakahiya man i-admit, I've been assigned by my CEO to handle the ad hoc committee of key officers from PAGCOR responsible for organizing, planning, mobilizing and carrying out our corporation's marching, musical, mobile and float units for the Independence Day parade. And finally today would be the culmination of our work, weeks of meetings, calls, presentations, negotiations, contract-signings, orientation sessions, briefings, rehearsals, and the like. Breathless? You can bet your ass I'm breathless...and bushed...and this close to becoming a nervous wreck!
Just last Friday I got a call from Let after they had a very nice, very comfy dinner in her Makati flat together with El Presidente, Brenda and Arlene Luna-Flores. Was one of the sorriest decisions I've done recently, passing up their invite in favor of an order from my boss to grace the inauguration of our latest VIP floor in our Angeles casino, which had just moved in to a new building. And in a flash today it's Thursday again!
Anyway there we were around our new VIP tables having chitchat with Pampanga's who's who when my mobile rings with who else but Let on the line. You could be sure if I had Neo's (the Matrix) flying skills I would have transported myself instantly from there to Let's condo so I can join them. As it were I was a mere mortal so I had to content myself using up Let's phone credits by insisting on talking to each one in their party individually! Thanks Let! Was good talking to you Arlene Luna Flores after all these years. I didn't get your number pala. Nice to hear from you again Dr. Bren. By that way, that was quite a post you did last week; as I said to you on Let's phone, you out-wrote us all. Best of all, you provided the most insightful item I've read since we started this messaging thing, namely: if God had wanted us to come together again after years to conceive of a reunion and to start inter-connecting our blessed lives via the Internet, it must be for a reason. And what better reason than to come up with ways on how we can pass on our blessings---no matter how meager or bountiful---to other people, to a cause, to a long-term noble endeavour.
So Nates has a few good ideas already up his sleeve. I'm sure the rest of you will come up with one or two simple, doable activities we can consider. Keep those posts coming then.
Arnel, I would never have imagined you to have such a sharp memory of the tiniest details, nuances, names and what-not from our high school days. Were you keeping a journal or diary? Buddy, c'mon, about time our dear President gave us a piece of his beautiful mind, we really need some guidelines on how we can proceed from here, gotta translate our prattle into practical action.

And now, the honorable mentions: The chef at a hotel in Switzerland lost a finger in a meat cutting machine and, after a little hopping around, submitted a claim to his insurance company. The company, suspecting negligence, sent out one of its men to have a look for himself. He tried the machine out and lost a finger. The chef's claim was approved. A man who shoveled snow for an hour to clear a space for his car during a blizzard in Chicago returned with his vehicle to find a woman had taken the space. Understandably, he shot her. After stopping for drinks at an illegal bar, a Zimbabwean bus driver found that the 20 mental patients he was supposed to be transporting from Harare to Beltway had escaped. When the clerk opened the cash drawer, the man pulled a gun and asked for all the cash in the register, which the clerk promptly provided. The total amount of cash he got from the drawer? $15 (If someone points a gun at you and gives you money, was a crime committed?) A thief burst into a Florida bank one day wearing a ski mask and carrying a gun. Aiming his gun at the guard, the thief yelled, "FREEZE, MOTHER-STICKERS, THIS IS A ....-UP!" For a moment, everyone was silent. Then the snickers started. The guard completely lost it and doubled over laughing. It probably saved his life, because he'd been about to draw his gun. He couldn't have drawn and fired before the thief got him. The thief ran away. In memory of the event, the banker later put a plaque on the wall engraved with the words, "Freeze, mother-stickers, this is a ....-UP!" Seems this Arkansas guy wanted some beer pretty badly. Within minutes, the police apprehended the snatcher. They put him in the car and drove back to the store. The thief was then taken out of the car and told to stand there for a positive ID. To which he replied, "Yes, officer, that's her. That's the lady I stole the purse from." The Ann Arbor News crime column reported that a man walked into a Burger King in Ypsilanti, Michigan, at 5 a.m., flashed a gun, and demanded cash. Sorry haven't been able to speak up more often, as our darling nurse from over there in Virginia appreciates: really busy busy busy! Just came off from our midyear planning conference, took the brunt of tough questions from the other VPs right after my presentation. So what else is new? Came out hilo but was able to protect my budget and staff pa rin.
Is dat really you Maane, cruising the Caribbean? My my my what a stunning, beautiful, elegant lady you've become! Lordy no wonder Arnel took a fancy to you in high school, only he saw the diamond in the rough that you were and we were all blind to it! Good eye Arnel; sorry ka na lang the lady's taken, he-he! And with your husband Maane you make quite a handsome couple too, you look happy together. Our compliments to your strapping young boys! Must be a handful to handle, these gentlemen in your life. Nates, we really have got to find a way to reach our old comrade Fake. Quite worried about him, haven't seen him since they layed over with us here in Manila about two years ago. Really unusual of him to keep out of touch this long, he always had some business to do and he never failed paying me a visit. Hope he responds to your missives.
As to Emmett, those of you who are in the know can perhaps find out more about our mentor's needs and problems. Please post a report about your findings here together with your recommendations, so that we can come up with a plan to make his waning days comfortable. We've all always known that a teacher's pay cannot possibly provide enough savings for one's autumn. Is he sick? Broke? Gainfully employed? Getting retirement benefits? Where is he staying? Who with? Does he get enough to eat? How about clothes and beddings?
It has come down to this, friends: The full measure of the quality of high school education that Emmett Brown Asuncion gifted us with now rests on how well and how fast we're going to respond to resolve his condition.
