When I saw this recipe being prepared it wasn't long before the camera started shooting.



    Zucchini and Parmesan Cheese

    and Steamed Rice


        Try this recipe - it's a good one.
        It is extremely easy to make and is very nutritious.
        If you're fortunate enough to grow Zucchini
        and have a herb garden, you've already got
        most of the ingredients.


        Ingredients

        Two medium sized Zucchini or four small ones.
        Two onions chopped
        Clove of garlic
        Two 400g tins of peeled tomatoes
        One tablespoon of chopped parsley
        Olive oil - 125 mls
        Sprig of rosemary - finely chopped
        Half teaspoon of chopped oregano
        Salt & Pepper
        Rice - steamed
        Parmesan Cheese


        Method

        Saute chopped onion and garlic in olive oil, then add thinly sliced Zucchini, parsley, oregano, rosemary, salt and pepper. Cook on a low heat and turn mixture frequently until tender. (about 20 minutes). Then add peeled tomatoes and cook for a further 5 minutes. Turn mixture into suitable dish and add the Parmesan Cheese. Serves six.




      All the ingredients (except the tomatoes) in the pan ready for cooking.







      Tomatoes now added - only five minutes to go! Wow!

      About Zucchini

      Zucchini are a variety of marrow. This vegetable was first developed in Italy.

      Christopher Columbus brought the seeds to North America. where it became established. Internationally, it was well known only to people of Mediterranean descent for hundreds of years, but it is now a very fashionable vegetable in the Western world.

      Zucchini are best eaten soon after picking or purchase. They are an excellent source of Vitamin C.


      Tip when growing Zucchini

      Don't depend upon the bees for pollination.
      You'll be disappointed at the number of promising Zucchini that just shrivel and die.
      Hand fertilizing is the way to go - when you see a male flower, use a feather to collect and transfer the pollen to the female. You'll get great results this way.
      Another idea is to plant some lavenda bushes nearby - this plant is great for attracting the bees and hopefully they'll notice the Zucchini nearby.

      Tip when growing Tomatoes


      For every tomato plant, plant three basil plants - the basil
      discourages the white butterfly which is responsible for the tomato grub. Basil is also a handy herb to have growing in your garden.

      Another tip concerning tomatoes is to not prune them - you might be surprised at the increased crop.
