| Madeira cake is easy to make. Traditionally, served with a glass of Madeira Wine - it is also great with a cup of coffee or tea. |
| Ingredients One and a half cups plain flour 175 gms caster sugar 175 gms butter 4 eggs 1 tsp baking powder 1/4 tsp lemon rind Juice of 1 lemon Small pinch salt |

| Method Mix butter and sugar until light and fluffy. Mix in lemon rind and add lemon juice. In a separate bowl beat eggs until thick and creamy. Add beaten eggs to butter and sugar mixture, and stir in well, then fold in sifted flour, baking powder and pinch of salt. When ingredients are thoroughly combined, spoon into a greased 8 inch by 4 inch baking tin. Place in a 180 Deg Celsius pre-heated oven for 45 minutes. Test cake is adequately cooked with wooden skewer. After removal from oven, leave cake in tin for about 10 minutes before turning out on to wire rack. |
