| Gem scones are very easy to make. You need 'gem irons'.
These are cast iron cups usually in a formation of 12 cups(see photo). The gem irons are made of cast iron, are quite heavy, their main property being to retain heat. The irons are preheated in a very hot oven prior to the scone mixture being placed in them. |
| Ingredients: Two tablespoons butter Two tablespoons caster sugar Two eggs 7 oz. self raising flour Milk |

| Method: Pre-heat gem irons in very hot oven Mix butter and sugar and add lightly beaten eggs and sifted flour. Add enough milk to make the mixture the consistency of thick cream. Remove gem irons from the preheated oven and grease the cups by placing a small amount of butter in each cup. Spoon the mixture into the gem iron cups and bake in very hot oven (260 deg C) for about six minutes. When cooked, remove scones from gem irons and enjoy. |
