| This is a great soup.
Easy to make and very nutitious. You can use freshly picked french
beans or climbing beans. I used some Purple King climbing beans for
my first attempt at making the recipe. After tasting it the family

3 bacon rashers, chopped 1 medium onion, chopped 500g beans 1 litre water 2 small chicken stock cubes, crumbled 1/2 cup cream grated fresh parmesan cheese | ![]() |
| Method |
| Melt butter in large
saucepan, add bacon and onion, cook 5 minutes (or microwave on HIGH
for 3 minutes); stir occasionally. Add beans, cook 1 minute, stirring. Add water and stock cubes, bring to boil, reduce heat, simmer, covered 15 minutes (or microwave on HIGH for 8 minutes). Blend or process in several batches until smooth. Return to pan, stir in cream, reheat without boiling. Serve sprinkled with cheese. Serves 4. |
