I have tried all these recipes and found them very good.

Casseroles and Main Dishes

Cheese Dumplings in Tomato Soup

For each person, combine and form into balls:
  • 1 oz bread crumbs
  • 1 egg
  • 1 oz shredded cheese (reserve small amount)
Heat tomato soup. When bubbling, add dumplings (they will double in size).
They take, depending on their size, about 12-15 minutes to cook
- just enough time to set the table and make a salad.
This is a great dish for those cold winter days, and has the virtue
of being reasonably low in calories. You will dazzle
your friends and family alike - don't tell them how fast and easy it is!
This recipe was sent to me by Marilyn Rognvaldson, since I like tomato soup I will give it a try.

Ham and Cabbage Bake

  • 1 small head of cabbage
  • 2 tablespoons butter
  • 1 cup sour cream
  • 1/2 cup grated Swiss cheese
  • about 1 pound of ham slices
Chop the cabbage and cook for about 5 minutes. Pour off the water.
In a sauce pan, melt the butter ,add the sour cream, and cheese, heat til cheese is melted.
In a greased baking pan arrange the ham and cabbage, pour the cheese sauce over.
Bake 20 minutes at 350 degrees

Crunchy-Topped Fish & Vegetables

  • 1 16 oz can whole potatoes -- drained
  • 1 16 oz bag frozen vegetable combination -- thawed (broccoli, carrots & water chestnuts)
  • 1/3 cup water
  • 2 tablespoons italian salad dressing
  • 1 cup (4oz) cheddar cheese -- shredded
  • 1/3 cup dry bread crumbs
  • 1 2.8 oz can durkee french fried onions
  • 2 tablespoons water
  • 1 pound unbreaded, fish fillets -- thawed
Place potatoes & vegetables in 8x12 baking dish.
Drizzle with 1/3 cup water & salad dressing.
In small bowl, using fork, combine 1/2 cup cheese, bread crumbs, onions and 2 tble water.
Sprinkle 1/2 the onion mixture evenly over vegetables.
Arrange fish over vegetables.
Top fish with remaining cheese, then sprinkle with remaining onion mixture.
Bake, uncovered @ 375� for 25 minutes.


Tuna Cakes

  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2- 6 oz cans tuna -- drained & flaked
  • 1/2 cup seasoned bread crumbs
  • 2 tablespoons onion -- chopped
  • 1/4 teaspoon pepper
Mix mayo and lemon juice, add tuna, bread crumbs, onion and pepper.
Shape into 4 patties.
Cook patties in skillet on medium-high heat 2 to 3 minutes or until golden brown.

Beef and Potato Casserole

  • 4 cups frozen potato rounds -- thawed
  • 1 pound ground beef
  • 1 10 oz pk frozen chopped broccoli -- thawed
  • 1 can-2.8 0 DURKEE FRENCH FRIED ONIONS
  • 1 medium tomato -- chopped
  • 1 can 10 oz cream of celery soup
  • 1/3 cup milk
  • 1 cup cheddar cheese -- shredded
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper
Place potatoes on bottom & up sides of 8x12 casserole dish.
Bake uncovered, at 400� for 10 minutes.
Brown beef, drain.
Place beef, broccoli, 1/2 can onions and tomatoes on potatoes.
Combine soup, milk, 1/2 cup cheese and seasonings; pour over beef mixture.
Bake, covered, at 400� for 20 minutes.
Top with remaining cheese and onions; bake, uncovered, 2 to 3 minutes longer.

Tuna Veggie Bake

  • 3 medium potatoes
  • 2 medium carrots
  • 1 large onion
  • 4 tablespoons margarine
  • 1/4 cup flour
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dill weed
  • 1 cup milk
  • 1 can cream of chicken soup
  • 1 cup frozen peas -- thawed
  • 2 cans tuna in water -- drained
  • 2 cups bisquick baking mix (optional)
  • 1 cup water
Heat margarine in large skillet and add potatoes, carrots & onion till tender.
Combine flour, pepper, salt & dill weed and sprinkle over vegetables.
Stir for about 1 minute.
Add milk, soup, tuna and peas.
Stir until thickens. Put into a 2 quart casserole.
Optional: Mix bisquick and water & pour over casserole ingredients.
Bake 375 degrees for 40 minutes.
If bisquick is not used, can top with a mixture of melted margarine and cracker crumbs.

Salmon Pie

  • 4 tablespoons butter (1/2 stick)
  • 3 medium potatoes (1 pound) -- Peeled & cut 1/2"
  • 2 medium carrots -- sliced
  • 1 large onion -- chopped
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 15 oz can salmon -- drained & flaked
  • 1 cup peas -- frozen
  • 1 large egg yolk

Pastry Topping

  • 1 cup milk
  • 1 egg
  • 1 1/4 cups Bisquick� baking mix
In 3-quart saucepan in hot butter, cook potatoes, carrots and onion until tender.
Stir in flour, salt, & pepper until blended; cook 1 minute.
Gradually stir in milk and cook until mixture thickens.
Stir in salmon and frozen peas.
Spoon into round 2-quart casserole; set aside.
Prepare bisquick for top. Pour evenly over top.
Bake 375* for 35 minutes

Tuna Noodle Casserole


  • 6 ounces medium noodles -- cooked & drained
  • 1 can tuna ( 6 oz.) -- drained
  • 1/2 cup mayo or salad dressing
  • 1 cup celery -- sliced
  • 1/3 cup onions -- chopped
  • 1/4 cup green pepper -- diced
  • 1 can celery soup ( 10 1/2 oz )
  • 1/2 cup milk
  • 4 ounces American cheese ( 1 cup) -- shredded
  • 1 cup bread crumbs
  • 1 tablespoon butter -- melted
Cook noodles & drain.
Combine noodles, tuna, mayo, celery, onion, pepper & 1/2 teaspoon of salt.
Blend soup & milk; heat.
Add cheese; heat & stir till cheese melts.
Add to noodle mixture.
Put into a 2 quart casserole.
Combine bread crumbs and butter; sprinkle over top.
Bake 425* about 20 min.

Slumgullion

  • Brown hamburger and chopped onion in a skillet. Drain well.
  • Add 1 can tomato sauce and 1 can Pork and Beans. Heat and eat.
  • Proportions are up to you.
    With 1 lb. hamburger, I use 8 oz. can of tomato sauce and 12 oz. can of Pork and Beans.

Another good recipe you can make in about 30 minutes is:

Brown Jug Soup

  • 1 bag California mix frozen vegetables (Cauliflower, broccoli and carrots)
  • 1 large can Chicken Broth
  • 3 medium potatoes
  • 2-3 Carrots
  • 1 onion
  • Celery, if desired
  • 1 lb. Velveeta Cheese
  • 1 Can Cream of Chicken Soup
Steam fresh vegetables (Potatoes, Carrots and Onion/Celery) until almost done.
Put in frozen vegetables and steam until all are done.
Pour chicken broth in 3 quart or larger size pan and add the cooked vegetables.
Stir in Cream of Chicken soup and Velveeta.
Heat over medium heat until cheese is melted and soup is hot.
Serve with big slabs of crusty bread!
Wonderful on a cold rainy day!

Chicken & Stuffing Bake

  • 1 cup boiling water *
  • 1 tablespoon butter -- melted
  • 4 cups prepared stuffing mix
  • 4 boneless skinless chicken breast halves
  • 1 10 3/4 can cream of chicken soup
  • 1/3 cup milk
Heat oven to 400* In large bowl mix water, butter; add stuffing and mix lightly.
Spoon stuffing across center of 3-qt baking dish, leaving space on both sides for chicken.
Arrange chicken on each side of stuffing.
In a small bowl mix soup & milk. Pour over chicken.
Cover & bake for 30 minutes or until chicken is done.

Chicken Broccoli Divan

  • 1 pound fresh broccoli, cut into spears -- cooked & drained or
  • 1 10 oz pkg frozen broccoli spears -- cooked & drained
  • 2 5 oz cans Swanson chunk white chicken -- drained
  • 1 10 3/4 can Cream of chicken soup
  • 1/3 cup milk
  • 1/2 cup Cheddar cheese -- shredded
In a 2 quart baking dish, arrange broccoli and chicken.
In small bowl combine soup & milk;
pour over broccoli & chicken.
Sprinkle cheese over soup mixture.
Bake 450* for 20 minutes or until hot and bubbling.
( try tuna instead of chicken, for a change )

Spaghetti with Tuna

  • 3 cups water
  • 1 can (14 oz) pasta-style chunk tomatoes
  • 1 can (16 oz) chick-peas -- rinsed and drained
  • 8 oz spaghetti -- uncooked
  • 1 can (6 oz) chunk tuna
  • 1/4 teaspoon pepper
Bring water, tomatoes and peas to boil in large skillet.
Stir spaghetti into skillet, cover and boil 12 minutes.
Stir in tuna and pepper.

Side Dishes

Crunchy Slaw

This recipe was given to me by a family member and was a big hit at my mothers 80th birthday party.

    For slaw combine:
  • 2 packages Ramon Noodles-Chicken flavor
  • 1 cup toasted slivered almonds
  • 1 cup sunflower seeds
  • 1 pound cole slaw mix
  • 2 grated carrots
  • 1 bunch grated onions

    For dressing combine:

  • 1 cup vegetable oil
  • 1/2 cup sugar
  • 1/3 cup white vinegar
  • 2 packs of seasoning from Romon Noodles
Combine slaw, carrots, onion and dressing
but don't add the noodles, nuts or seeds until just before serving to remain crunchy.

Desserts

Quick Candy Treats

This is a guessment recipe--just guess on amounts.
  • Put chopped nuts on a small pizza pan (I used 1 pound)
  • Put chunks of chocolate or chocolate chips on top (I used 1 pound)
  • Melt 1 stick (1/4 pound) butter, 2 tablespoon water
  • To melted butter add 1 cup sugar
  • Pour over nuts and chocolate
  • Sprinkle more nuts on top and pat down
  • Refrigerate--Cut--Enjoy
The amount of nuts and chocolate is up to you, depending on the size of pan.
Another quick treat-- melt chocolate and pour over crushed pretzles, form balls and refrigerate.

Peanut Butter-Chocolate Bars

  • 6 cups Honey Nut Cheerios Cereal
  • 1 1/2 cups miniature marshmallows
  • 1 1/2 cups peanut butter chips
  • 3/4 cups light corn syrup
  • 3 tablespoons margarine or butter
  • 1 cup milk chocolate chips, melted
Butter rectangle pan, 13x9x2 inches. Measure cereal and marshmallows into large bowl; set aside. Microwave peanut butter chips, corn syrup and butter in microwave bowl uncovered on High 2 to 3 minutes, stirring after each minute, until smooth. Pour over cereal mixture, stirring until evenly coated. Press into pan, using buttered bacvk of spoon; spreaed with melted chocolate. refrigerate about 1 hour or until firm. Cut into bars.

Oreo O's Bars

  • 1/4 cup (1/2 stick) butter or margarine
  • 1 package (10 1/2 ounces or 6 cups) miniature marshmallows
  • 8 cups POST ORES O's Cereal
Microwave butter in microwave bowl on high 45 seconds or until melted. Add marshmallows,mix to coat. Microwave 1 1/2 minutes or until marshmellows are melted and smooth. Add cereal. Mix to coat. Press into greased fiol-lined 13 x 9 inch pan. Cool and cut into bars.

Fried Bananas

  • 2/3 cup flour
  • 1/2 tablespoon sugar
  • 1/2 tea baking powder
  • 1/2 tea salt
  • 1 egg
  • 1/3 cup milk
  • 1/2 tea corn oil
  • 1/2 tea vanilla
  • 1 tablespoon lemon juice
  • 2 large bananas
  • 2 cups salad oil
  • confectioners sugar
In a small bowl combine flour,sugar,baking powder,salt mixing well. In a larger bowl combine milk,corn oil,vanilla,1 tea lemon juice. Slowly add the mixture from the small bowl tothe large bowl, stir until smooth. Slice the bananas and sprinkle with remaining lemon juice. Heat the salad oil, coat the banana slices with flour and dip into the mixture in the bowl. Deep fry the slices until golden brown. Drain and sprinkle with confectioner sugar.

Peanut Butter No-Bake Cookies

  • 1 � cups sugar
  • 1/2 cup milk
  • � cup cocoa
  • 1 stick margarine
  • � cup peanut butter
  • 1 teaspoon vanilla
  • 3 cups quick oats
Combine sugar and milk in a saucepan. Boil for 1 minute. Remove from heat and quickly add remaining ingredients. Combine well and drop by spoonfuls onto a waxed paper-lined cookie sheet. Refrigerate until firm. Store in refrigerator. They have almost the consistency of fudge. Be sure to use quick oats and either creamy or chunky peanut butter.

Oreo Treats

  • 8 wooden pop sticks
  • 4 bananas halved crosswise
  • 12 oreo cookies finely chopped
  • 2 tablespoons sprinkles
  • 3/4 cup peanut butter
Insert pop sticks into cut end of each banana;
set aside.
Mix chopped cookies and sprinkles;
set aside.
Spread each banana with peanut butter;
roll in cookie mixture to coat.
Individually wrap coated banana in plastic wrap
and freeze until firm.
Remove from freezer 10 minutes before serving.

Wacky Cake

This is a very moist cake you won't believe what a great taste!

  • 2 teaspoons baking soda
  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon salt
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla
  • 2/3 cup oil
  • 2 cups water
Mix all ingredients and pour into a greased and floured pan.
Bake 350 degrees in a tube pan for 45-50 minutes
or in a 10" square pan 40-45 minutes.

Cool Whip Surprise

  • 9 oz cool whip
  • 1 pound cottage cheese
  • 1 small box (4 oz) jello (dry)
  • 1 small can (16 oz) fruit cocktail (drained)
Mix all ingredients, Chill and serve.

7-UP Salad

  • 24 large marshmellows
  • 7 ounces 7-up
  • 8 ounces cream cheese
  • 1 small (4 oz) jello
  • 1 16 oz can crushed pineapples
  • 1 cup walnuts
  • 1 small container whipping cream
In saucepan melt 24 large marshmellows in 7 ounces of 7-up. Mix until melted and syrup forms.
Pour over 8 ounces of cream cheese, mix until smooth.
Add 1 small pack of Jello, 1 can of pineapples (do not drain)and walnuts.
When slightly jelled add 1 small container of whipping cream, mix until fluffy.
Refrigerate

Pudding Freeze

  • 1 small box instant pudding
  • 1 1/2 cups milk
  • 8 ounces cool whip
Beat pudding and 1 1/2 cups of milk together.
Add cool whip and freeze.

Breakfast or Snack

Strawberry French Toast Sandwiches

  • 1/4 cup + 2 Tablespoons Cream cheese -- softened
  • 12 slices bread
  • 6 tablespoons strawberry jam
  • 3 eggs
  • 3 tablespoons milk
  • 2 tablespoons margarine
  • confectioner sugar for garnish (optional)
  • fresh strawberries for garnish (optional)
Spread 1 tablespoon cream cheese on each of 6 bread slices.
Spread 1 tablespoon jam over cream cheese.
Top with remaining slice of bread.
Combine eggs and milk, beat well.
Dip each sandwich into egg mixture, coat both sides.
Melt 2 tablespoons margarine in large skillet and cook three sandwiches until brown on both sides.
Repeat with remaining sandwiches, adding more margarine if needed.
Sprinkle with powdered sugar or garnish with fresh strawberries.

My bread pudding

  • 6 cups bread crumbs
  • 1 cup sugar
  • 4 large eggs -- beaten
  • 4 cups milk
  • 2 teaspoons vanilla
  • 4 tablespoons butter -- melted
Put bread crumbs into a 13" X 9" pan. (I use a Pampered Chef pan)
Pour over all combined ingredients.
Sprinkle with cinnamon sugar to taste.
Start with a cold oven bake 1hour 10 minutes @ 350 degrees
Joanne Paquette sent me this easy and quick fudge recipe that her girls love.

Rocky Road Microwave Fudge

  • 1 cup chocolate chips
  • 1 cup confectionary sugar
  • 1/4 cup margarine
  • 1 egg
Mix well, microwave one minute then mix and microwave again for one minute.
Mix well and add one cup of marshmellows and nuts if desired. Refrigerate.
