| Parsley Stuffed Turkey Breasts |

2 turkey or chicken breasts, skinless and boneless |

1/4 cup minced fresh parsley |

1/2 tsp. minced garlic |
 |

1 tbs. olive oil |
 |
|
1 green onion, chopped in its entirety |

juice of 1/2 lemon |
 |
|
1/2 tsp. Italian seasoning |
 |
|
juice of 1/2 lemon |

lemon pepper for seasoning |
With a sharp knife cut a slit in each breast. You are going to stuff the breast so you don't want to slice the entire breast, just enough to make a pocket. Mix together the next six ingredients. With a spoon, stuff the breasts with the mixture, leaving about 1 tbs. Place the breasts in a oven dish. Squeeze the juice of half a lemon over the breasts. Sprinkle with lemon pepper, and top with the remaining bit of parsley mixture. Cook for 45 min. to 1 hour, in a 350 degree oven.
