TEXAS CAVIAR
3 cans of black eyed peas, drained & rinsed
� red bell pepper, chopped
� green bell pepper, chopped
� of a Vidalia onion, chopped
2 fresh jalape�os, seeded and minced
Kosher salt and freshly cracked black pepper
� vinaigrette dressing (or whatever is enough to coat the vegetables)
Chopped celery (optional)
Mix the black eyed peas, bell pepper, onion, and jalape�os. Next, pour on enough vinaigrette to coat & toss it all together. Add salt & pepper to taste. Chill for 2-3 hours at least, but preferably overnight so that the black eyed peas absorb the vinaigrette. You may need to add a bit of additional salt and pepper before serving.

ZIG�S
"TOFFEE" APPLE DIP
Several containers of soft cream cheese
Brown sugar
Cinnamon
Nutmeg
Tablespoon of vanilla extract
Granny Smith apples
You can also add:
Clove
Allspice
Pumpkin pie spice
Mix, by hand, cream cheese and brown sugar together in large bowl.
Add a fair amount of cinnamon, and a little nutmeg.
Add vanilla.
Add other spices, to taste.
Adjust brown sugar, to taste.
End result should be a well-blended light brownish mixture- sweet, and cinnamony.
Serve with sliced up Granny Smith Apples, or other firm, not-too-sweet, apple (Empires are good too). Garnish with a sprinkling of cinnamon and a couple of cinnamon sticks.
Tip: I always put the apple slices in water and lemon juice so that they don't turn brown. Fruit fresh works really well too.

TOO TOO EASY CHEESE QUESADILLAS
Good as an appetizer or as your whole dinner. It's like Mexican grilled cheese. Ole!
2 flour tortillas
Grated cheddar
Grated Chihuahua cheese
Salsa
Sour cream
Cover one tortilla with the two kinds of cheese. Put other tortilla on top. Microwave. Snip into eighths. Eat; dipping into salsa and/or sour cream while you microwave another one. Yum.

UGLY BUT GOO-OO-OOOD SHRIMP DIP/SPREAD
1 package cream cheese
1 lb cooked, rinsed, dry shrimp
1 bottle of cocktail sauce
1 box of crackers - I prefer stoned wheat thins
Put block of cream cheese on plate. Dump shrimp on top. Pour bottle of cocktail sauce over it. Chill. Use knife to spread cream cheese on crackers, and then scoop up some shrimp and sauce. Eat. Say MmmmmmMMm.

YUMMY VEGAN SMOOTHIES
1 c. ice
1 banana
� cup frozen or fresh berries
1 fresh peach/nectarine, or frozen equivalent
� cup Vitamite or Soy Milk
Optional: Protein powder, Sugar or Splenda to taste
Put all contents in a blender and blend. For a thicker smoothie, add more banana. For a thinner smoothie, add more vitamite/soy milk. This can really be done with any mixture of fruits that you want. My favorites are raspberries, nectarines, and blueberries, with the banana and the rest. Makes one or two smoothies, depending on your appetite!
