MINTED PEA PUR�E

Do not be afraid�this stuff might be bright green, but it�s as addictive as hummus�and easier!

1 bag frozen snap peas thawed (no pod)
1T lemon juice
2 cloves garlic
1/3 cup fresh mint leaves
Olive oil
Salt & pepper

Throw the first four ingredients into a food processor. Pulse until a paste forms. Add olive oil in a thin stream while pulsing until you get the consistency of thick hummus. Add salt, pepper to taste. Spread on toast points, pita wedges or baguette or serve with crudit�s.
