MONTE CRISTO MINI SANDWICHES

This was one of my two submissions to the last Pillsbury Bakeoff. Didn't place. Those fuckas.

Prep time: 10 minutes. Ready in 45 minutes.

Preheat oven to 350.

1 can Pillsbury Crusty French loaf
2 tbsp reduced fat mayonnaise
1 tbsp Dijon mustard
4 (112 g total) slices turkey ham lunch meat
4 (112 g) slices lean turkey breast lunch meat
4 slices (96 g) thin reduced fat Swiss cheese slices
� cup egg substitute
2 tbsp skim milk
1 tbsp margarine
2 tbsp powdered sugar, placed in a shaker or sifter
Cranberry sauce, if desired

Spray a 13" X 18" cookie sheet or jelly roll pan with cooking spray. Remove dough from the tube. Very carefully unroll the dough, mending any tears in the dough with wet fingers. Spread on mayonnaise and mustard. Layer meat slices alternately, overlapping from end to end. Top with cheese slices. Make sure meat and cheese cover equal parts of the dough. Carefully roll up the loaf; holding in the meat and cheese. Seal all openings with moistened fingers. Place loaf on prepared pan. Make very shallow slashes along the top (four or five). Don't cut too deep; the cheese will bubble out. Bake at 350 for 25-30 minutes or until golden brown. Cool completely. Melt margarine in a skillet over medium heat. Cut loaf into 1-inch slices. Mix egg substitute and milk. Dip slices in the egg mixture. Fry in skillet, one minute on each side or until resembling French toast. Transfer to a plate. Shake or sift powdered sugar over sandwiches. Serve with cranberry sauce if you like.
