-Rinse seeds until clean of pumpkin pulp -In a medium mixing bowl combine pumpkin seeds, cooking oil, and salt -Spread mixture onto a waxed-paper lined 15 x 10 inch baking pan -Let stand for 24 to 48 hours or until dry, stirring ocassionally -Remove waxed paper from baking pan -Toast seeds in a 325 degree F oven for 40 minutes, stirring once or twice

-To prepare the crab cakes, melt a skillet with Pam cooking spray and saute the onion, bell pepper, and garlic until the pepper is limp, approximatley 3 minutes -Gently fold in the crabmeat -Form the mixture into 8 patties, about 1/2 inch think each -In a mixing bowl, combine the remaining 1/2 cup of bread crumbs with the Parmesan -Pat this topping onto both sides of the patties -Refrigerate until firm, about 2 hours -Cook on indoor grill for reduced fat |

-In a large skillet, brown turkey meat -Drain meat and transfer meat to a large kettle or electric slow cooker (croc-pot) -Add water and tomato sauce to meat and cook over low heat -Saute onion, green pepper and garlic -Add remaining dry ingredients (seasoning) and chopped jalapenos -Simmer for about 30 minutes -Drain oil and transfer to pot -Simmer in pot for about 2 hours -Remove grease that settles on top, then serve |

Hawaiian Quesadillas 4 8-inch Tortillas 2 cups Colby Jack, Mozzarella, or any type of White Cheese 2/3 cup Ham, chopped 2/3 cup Green Pepper, chopped 2/3 cup Onion, chopped 2/3 cup Pineapple, chopped Cayenne Pepper, Salt, Pepper to season |

-Combine ham, pineapple, peppers and onion in a large bowl with seasonings -Marinate in pineapple juice for at least two hours -After allotted time, drain and saute ingredients in large skillet until ham browns and vegetables soften -Top tortillas with cheese and then main toppings (ham, pineapple, etc.) -Either melt on stove top of indoor grill -Serve after tortilla is toasted and cheese is completely melted |
