Sopa de
Tortilla
8 Tortillas (Sliced in 1/2"
Strips)
3 Med. Tomatoes Quartered
1/4 Cup Vegetable
Oil
1/2 Medium Onion
4 Cups Chicken
Broth 1 Clove Garlic
1/4 Cup Sour Cream Salt and Pepper to Taste
1 Tablespoon Milk
In blender, mix together tomatoes, onion, garlic, salt and
pepper. Cut long tortilla strips in half and fry in oil in soup pot until golden
brown. Drain on paper towels. Remove excess oil from pot. Add fried tortilla
strips to pot and add tomato mixture. Simmer for 1 minute, then add chicken
broth. Simmer for 15 minutes. In small bowl, mix sour cream and milk until well
blended. Serve with dollop of sour cream mixture on top of soup.
