Flan
INGREDIENTS

5 Eggs                                            1¾ Cups Sugar
4 Egg Yolks                                    3¾ Cups Milk
1½ Tsp Vanilla                              2½ Tbs Water

Preheat oven to 350 degrees. Place ½ cup sugar and water in small heavy saucepan and cook over medium heat, swirling pan, until sugar has dissolved and liquid is clear. Continue to boil, swirling frequently for approximately 3-5 minutes until  sugar is golden brown. Immediately pour into mold(s) rotating to coat bottom evenly. Set aside and allow sugar to harden. Simmer milk in small, heavy saucepan. Add vanilla  and simmer for about 4 minutes. Meanwhile, in large bowl, beat eggs and yolks together with wire whisk or electric mixer. Slowly add remaining sugar. When mixture is light and foamy, add milk gradually in thin stream. Place mold(s) in roasting pan with 1" of boiling water on bottom. Bake in lower third of oven for approximately 45 minutes or until knife inserted in center comes out clean. (Remember to check oven occasionally to make sure that water is not boiling nor has it evaporated.) Let settle in pan of cold water for approximately 10 minutes. Serve warm or cover and chill for 2 hours. Unmold onto serving plates.
