Chile con Carne

INGREDIENTS

6 Tbs Vegetable Oil                                2 Lbs Cubed Sirloin
2 Cups Chopped Onion                          2-4 Tbs Chili Powder
2 Tbs Chopped Garlic                            1 Tsp Oregano
1 Sm Can Tomato Paste                        1 Tsp Cummin
4 Cups Beef Stock                                   1 Tsp Red Pepper Flakes
Salt & Pepper to taste                            2 Cans Black Beans
2 Cans Kidney Beans

Cube meat into ½ square cubes. Heat 4 tablespoons oil in frying pan and add meat. Cook on high 2-3 minutes stirring constantly until all sides are browned. Set aside in a bowl. Add remaining 2 tablespoons of oil to frying pan. Add chopped onions and garlic. Fry for about 4-5 minutes over medium heat. Remove from heat. Mix in chili powder, oregano, cumin and red pepper flakes. Stir until onions are coated. Add tomato paste and mix well. Pour in beef stock and mix well. Add meat, salt and pepper. Stir and bring to a boil. Cover and simmer for 1-1½ hours. Add kidney beans and black beans during last 15 minutes of cooking.
