| When composer Giuseppe Verdi ( 1813-1901 ) needed inspiration, he had a bowl of noodle soup. In olden days, the evening meal consisted primarily of broth- considered a poor people's recourse- so it isn't a surprise that the Germatic words sip, sop, soup, and supper are related. A chef identified only as "Lebas" invented solidified and soluble boullion in the first half of the 18th century. His "consomme in lozenges", as he called his product, was the forerunner of dry and powdered soups. The first chicken soup was made in the poor communities in Russia where for centuries poultry was the only affordable meat. Many families used the whole bird to prepare a three-course traditional meal, starting with chopped liver, followed by a broth-like soup and finishing with the rest of the fowl for an entree. |
