How to Cook the Sushi Rice
(*2 cups of rice) This amount can make about 10 sushi rolls or 35 pcs of nigiri.

Using a rice cooker to cook:
1.1) Wash and Mix the rice 2 or 3 times;
1.2) Discard the whitish water;
1.3) (Add the water until covers the rice;) *optional
1.4) (Let rice soak in the water for 30 minutes;)*optional
1.5) Drian all the water well;
1.6) Place the rice in the rice cooker and Add 2 cups of water
       (if you didn't soak the rice for
30mins, please add 2.3 cups of water to the rice
        pot);
1.7) cook the rice for 40 minutes;

How to Mix and Cool the Sushi Rice (Revised version)

Sushi Vinegar: (10:8:1) This recipe has been used by many restaurants
Actural sample: 1000ml (4cups), 800ml (3.2cups),  100ml(0.4 cups);
10parts of rice vinegar (Mistukan or Shirakiku);
8parts of surgar;
1parts of salt;
Note: Mix all the ingredients well until dissolving. If u don't like to take that much surgar, an another (5:5:1) method can be used. Dried Kelp also can be applied to the sushi vinegar. Before putting in a piece kelp, the kelp should be rinsed and dried with paper towels.

How to Mix and Cool Sushi Rice:
Place cooked rice into a basin-like container (Steel Bowl), add 1/2 cup of sushi vinegar to the rice, mix the rice well by using a moisted wooden flat spoon in a slicing motion. Do not press the rice or crush it. Then, use a wet towel to clean around the wall of the container and the spoon, if there is any rice stiked on. Then, let it cool for 5 to 7 minutes. Then, mix and turn the rice over. Wait for anohter 5 min. Feel the rice, if it's close to your skin temperature, the rice is done. If it's still hot, then, mix and turn it over again. After the rice has turn cold, put it in a container. Cover it with a thick moist towel or moist clothe. The rice will last for 3 hours.
Note: Mixing sticky rice can be  a massy job. A wet towel always will become handy. The amount of the sushi vinegar usually is 1/4 of your rice amount. (Ex: 2cups rice need to add 1/2 cup sushi vinegar) If there is any left-over, make rice cake. The size is about a small cookie Push with some mixed eggs and put panco (dried bread powder). Pan-fry it or deep-fry it. Serve it with Salmon roe or sliced smoked salmon with cucumber slices. Wasabi or any Salad dressing can be applied. (This is one kind of Sushi Pizza as appetizer.)
