How many types of sushi are out there? Mainly, there is three type of sushi: Nare-zushi, Nama-nari-zushi and Haya-zushi. Today, the most sold and seen sushi is Haya-zushi, such as sushi rolls, nigiri (hand-formed sushi), hand-rolls and chirashi-zushi.
Haya-zushi means instant fermentation. Haya-zushi is made without the use of any stone weight. This is a major difference from the other two. Nigiri-zushi (hand-formed sushi) is a represantive of Haya-sushi. It becomes a image for the most people when the word--sushi has been spoken.
