Sashimi is also served in the sushi restaurants. Sushi is not always raw. But Sashimi usually is chilled, sliced fresh raw fish or seafood. It has been elegantly arranged and garnished with raw vegs, sush as shreded raddish, carrots, green seaweeds, lemon leaves and Japanese herbs.
Sashimi should be odorless and delicate. The best sashimi is when fish is fresh. However, inside of almost all the sushi restaurants, fishes have been frozen before thawing, then serving. Frozen has two purposes: to sanitize the fish and to keep its freshness.
