Sushi Shrimps

Preparing time: 30 minutes
Amout: 1Lbs Black Tiger Shrimp tail

Ingredients & Materials:
1Lbs black tiger shrimp tail
some Bamboo sticks
1pc lemon
some parsley
1Tbsp salt

Preparing:
1. Thaw tiger shrimp if it's frozen.

2. Use high heat to boil a big pot of water. The amount of the water must be enough to cover the shrimp. Put the salt in.

3. Insert Bamboo stick under belly shell of the shrimp, from the head to tail, one by one. (The shrimps will become straight on the stick.)

4. Prepare some ice and a pot of cold water in the sink. When the water has boiled, Put the parsley and  1/2pc lemon. Wait it boils for 30 seconds.

5. Put the shrimp to the boiling water. Wait for 2 minutes. If are using a gas stove, it only takes 1 and half minute. Turn off the heat.

5. Pour the shrimp and hot water into the cold water pot. Put the ice in. Then, Rinse with cold water until it's cold.

6. Pull out the sticks. Take off the shrimp shell. Turn the shrimp belly up and the head part towards u. Cut open the shrimp from the tail to head. However, don't cut through the back skin, Leave the back skin connected. It's like a butterfly cut. The whole shrimp shound be remained in one piece. Olny, it becomes a flat piece as seen in the sushi restaurant.

7. After this cut, the black string inside of shrimp can be discovered. Use the wate to risen it and take away the black string. When finished all the shrimp, put them in a container and use the running water to rinse for 5 mintues.

8. Use the remained 1/2pc lemon's juice to season the shrimp for 5 minutes. Turn the shrimps over for 2 or 3 time while seasonning.

Note: Rice vinegar also can be applied while seasonning.
