Nuddles

The most common Japanese Nuddle has 3 types: Hand-made nuddle (RaMen), Wheat nuddle (Soba), Dried Udon nuddle (Udon).

Veg Nuddle:

Preparing time: 20 minutes
Amount: 2 servings

Ingredients: 
300g Soba or Udon or Ramen
8pc asparagus
1/2Lbs Bean sprouts
1/2Lbs Bachoi or Chinese Cabbage
6ps Shitake Mushroom or other Mushrooms
1/2stlk celery
2stlks green onion
2Tbsps Sesame oil or veg oil
1Tbsp lite soy souce
2Tbsp Miso paste

Prepare

1. Cook the Soba in the boiling water for 5 minute. Stir it from time to time. Add Some cold water to it. Then, let it cook for 2 more  minutes. Taste the soba see if it's ready.

2. Drain the hot water and Use the cold water to rinse the soba.

(3. Boil the vegs or staute the vegs or steam the veg. The Bean sprouts should be cooked at the last one. Bachoi or Cabbage should be cooked first. The oil can be applied here, and some water or stock or sake,  and a pinch of salt.) *optoinal

4. Put 4 cups of
Dashi or any stock or just cold water in a pot. Bring it to boil. Add in the Miso paste and soy souce. Add in the veg boil for 3 seconds.(If step-3 has been skipped, add in the veg here to cook for 2 mintes.) Taste if it's ready, a pinch of salt might be needed.

5. Place the soda in two different plates. Arrange the Veg on it. Add the rest of soup to it. Add Sesame oil if is prefered.
