Sushi Vinegar (LITE)

TOJO is a popular sushi restaurant in Vancouver. Here is the Sushi Vinegar used by this restaurant:

(3:1:1) This recipes is lite on the sugar and salt.

Prepare time: 5 minutes

Ingredients:
900ml Rice vinegar.
300ml Sugar
300ml Salt
4 inch Dry Kelp

Preparing:
1. Take 900ml Rice vinegar. Add 300ml Sugar and 300ml Salt. Mix until dissolving

2. Moist a clean cloth and wring well. Use the cloth to clean the kelp's surface carefully. Put the cleaned Kelp into the vinegar.

3. Place Sushi vinegar in the frig.
