Spicy Tomato Chicken 

What you need:

6 pcs Chicken, cleaned well
1 tbsp Fish curry powder 
2 or 3 cloves garlic
1 medium onion, sliced 
1 1/2  inch ginger
1 tsp frying-spice (rempah tumis)
2 tbsp Tomato paste ( or more if you like)
1 tomato, diced
1 tbsp chilli paste
1-2 tbsp tumeric powder
Curry leaves, a little
A little pepper
Salt to taste

What to do:

*Firstly, pound or grind together garlic and ginger.
*Add a little water to the tumeric powder and a little salt and form a paste.  Coat the chicken pcs to the paste. 
*Heat oil, fry chicken pcs for a few minutes, turn and fry the other side. When done, bring the chicken out and put aside.
*Mix curry powder, chilli paste, ginger/garlic paste and tomato paste together.  
*With the same oil used to fry the chicken, fry sliced onions till yellow.  This might take a few minutes.  Don't burn onions. Add in curry leaves, fry till fragrant.
*Add in the mixed powder and pastes into the onions.  Fry for a few minutes. Dilute with water if too dry.  Add pepper to taste.
*Add in fried chicken pcs.
*Season with salt and taste now.  Stir slowly so as not to break the chicken slices.
