Spaghetti with Clam Sauce

What you need:

1kg fresh clams
2/3 cup (160ml) water
2 tbsp olive oil
2 cloves garlic, crushed
1 medium onion, chopped
4 medium tomatoes, peeled, chopped
2 tbsp tomato paste
1/2 tsp sugar
1 tsp chicken stock powder
1 tbsp chopped fresh basil
Season with salt and pepper
400g spaghetti pasta, boil, drain well

What to do:

*Combine clams and water in pan, bring to boil, simmer, covered, stirring occasionally, abt 3 minutes or until clams open.  Strain clams, reserve liquid.  Remove and discard the top half of each clam shell. 
*Heat oil in pan, add garlic and onion, cook, stirring, until onion is soft.  Add tomatoes, paste, sugar, stock powder and reserved cooking liquid, simmer, uncovered, abt 15 minutes or until sauce is slightly thickened.  Add clams and basil, stir until heated through.  Serve with spaghetti.
Serve 4.
Recipe is best just before serving.
