Grandma's Chili

1ST grade in 1970 was much
different than it is today. Some immunizations were actually given at
school. Talk about scary!
Mrs. Erbaugh was my teacher, and lets just say my knuckles met with her
ruler more than once!
I was absent on a day that some immunizations were being given so my mom
took me to the family doctor for a shot.
That night for dinner my mom was preparing my least favorite meal, soup
beans with ham and corn bread..............YUCK!
Wiping my tears on the way home I thought about dinner and started to
cry all over again!! You can imagine my excitement when I arrived home
to find out dinner was ruined, the water had boiled out and the beans
were burned!! YEA!!
Off to grandma's house we all went for dinner. Now, picture this, and I
am not kidding............We walk into grandma's house and that familiar
smell hits me...SOUP BEANS WITH HAM!!!! She was having the very same
thing. (must have been a sale at the IGA) I started to bawl!
Well, Grandma being Grandma, she would have none of that. Leftover chili
from last night for Jeff. Now Grandma never believed in "You eat
what is for dinner or go hungry" like my mom did. (but apparently
this is just a parents belief, because my mom no longer has this
philosophy for her grandchildren!)
Let me tell you, my grandmother's chili was the best in the world! That
was the best meal I ever ate, and to this day when I make grandma's
chili, I think of that day in November 1970 when the beans and ham
burned!
"GRANDMA'S CHILI"
Items needed
Crock Pot
2 lbs of ground beef
1 lg can of crushed tomatoes
2 cans of red kidney beans
1 1/2 cans of water (use the kidney beans can)
1 pack of chili seasoning
chili powder (about 2 tsp)
1 med yellow onion
chives (sprinkle in)
onion salt (sprinkle in)
green pepper (if you like)
shredded cheddar (if you like)
sour cream (if you like)
crackers of your choice
Brown the ground beef in a skillet and drain, place in crock pot.
Add the crushed tomatoes and 1 1/2 cans of the kidney beans, (DO NOT
DRAIN) (I know its a little wasteful but two full cans of kidney beans
is too much).
Chop the onion and add it, add the chili powder, seasoning packet,
chives and onion salt.
Cook on low all day, the longer it cooks, the better.
At dinner, dish up the chili into bowls and add cheddar cheese and 1
tbsp of sour cream to each bowl with crackers on the side.......ENJOY
and think of me as a 7 year old in grandma's kitchen eating the best
meal of my life!!
