Parcel Cakes
Materials
Required:
o
store bought Christmas cake
(cut into 9 cubes each 5cm x 5cm)
o
ready to roll icing (150g per parcel)
o apricot jam thinned with boiling water
o ribbon, about 85cm per parcel
o canola spray
o
optional – silver cachous (silver balls)
Instructions:
1.
Gently
knead icing to warm it up.
2.
Spray
bench with canola spray. Roll out the
icing. For each parcel the icing should
be to a thickness of 4mm and about 15cm square.
3.
Applying
the Icing: Thinly spread apricot over
the top and sides of the cube (not the bottom).
Place the cube, bottom down, on the bench and centre the icing square
over it. Smooth over the top by gently
rubbing in a circular motion. Gently
press it in around the corners and the sides.
Don’t pull the icing down or it will crack. Cut off excess icing around the base.
4.
Turn
cake over & apply apricot jam to the base.
Cut a 5cm square of icing from the excess & place it on the bottom.
Pinch edges together to seal. Gently
smooth your hand over the icing in a circular motion to blend in the base to
the sides.
5.
Decorating
the Parcel Cake: Place the middle of the
ribbon on the centre of the top of the cake, twist the ribbon underneath, bring
it back up and tie a bow on the top.
Other Options: decorate plain white iced cakes with silver cachous –
brush the icing first with egg white so they stick.
